In the 'burbs where I live, the developers stripped off most of the topsoil; there is about six inches of good dirt before you hit clay. It doesn't take a whole lot of rain to saturate the ground and start running off into the street.

I haven't. I have a charcoal smoker, and I like to do ribs, pork shoulders, and beef briskets, but all of those get smoked at 225 to 275 degrees F. Things like fish and cheese are normally done in a smoke house at much lower temps, although I'm told that "cool" smoking can be done in a backyard smoker with a little practice.
