Brad: This was the first time I tried a fresh one. It was beautiful hock though. I usually cook the cured & smoked ones. Terry said she used to get them on the farm. This was bigger than she was used to. She used to boil them in onion soup mix! (too Salty). She tried a Martha Stewart recipe! lemon & all that.
Started at *475 & turned down to *350 . Too hot!
The cured ones I scored & cooked on a rack at 350 for a few hours. When they looked good I cranked it up 'till the skin sizzled. I showed you a pic once. There's a new computer hack in town that is going to reload my cameras program so I can post new pics again.
I have used this kitchen tool that looks like a comb or a hair pick with sharp tines to prick the skin on pork bellies on the Primo. Then you bring them in & finish them off under the broiler in your stove.

Dale, by more luck than judgement I tried a chippy that I'd never been o and they were the best fish and chips I've had in a long time. Next time we visit this beach, I'll definitely be calling in again.

Chicken Sheppard's Pie
(Courtesy of Mrs. Pierce, one of the many nice ladies on my paper route when I was a kid)
Large casserole dish
Line the bottom with bacon strips
Layer of hash browns w/diced peppers & onions
Layer of creamed chicken
(Sounds bad, but it's just shredded chicken mixed w/cream of chik soup & peas)
Layer of hash browns w/cubed ham
Layer of shredded cheddar cheese
Top w/chopped green onion &/or crushed potato chips if you like a crunch
Bake @ 350 until it's done
(I'm using a round, 3 qt casserole dish, I'm figuring 45-60 minutes)
Haven't made this in years, but I don't remember ever having one turn out bad.
The ladies on my paper route took good care of me. I started the route when I was eleven years old. On weekends, my dad woke me at dawn to deliver papers. On Saturdays, when I was done, I did chores at home until 9am, then set out on my route to collect money. Wherever I was when lunchtime rolled around, some lady would take me into her house for lunch. Really good food. Really good people. I'd walk out with baked goods or homemade candy every time.
From now on, I'll call this,

Good deal at the supermarket today! I turned in $3.80 in returnables, and picked up a whole chicken that was on sale for .77/lb, or $3.79. Essentially got a whole meal for free, plus a can of corn and one of Lima beans (Al loves them; I think they're nasty.)
I roasted the chicken with garlic paste under the skin and Hot Dirty Bird allover. Nice flavor! No pix!

Pancakes must go the other way = 20% buck wheat flour.
The Tabasco recipe (website now) for corn bread was meant for muffins but I use a skillet.
Crosby's Fancy (100% cane) Molasses even works on ice cream.

.I love good sweet moist cornbread, polenta , and cornmeal pizza crust, but I have never had Johnny cakes. Gonna have to make em one of these days. Can’t imagine they’re bad!!!
One of the few things I DONT allow at my table is anything made with buckwheat.
I think I’m allergic to it, as every time I have anything made with it, my tongue goes numb and my throat gets itchy and a burning sensation in my mouth. My wife has tried to sneak it in recipes and I win every time, or lose depending on how you look at it.

“Drink That Bottle Night!” The last Saturday of February is, “Drink That Bottle” night. You drink a bottle of wine that has been sitting on your shelf, or in your rack, that has no further aging value. And you need to dispatch it.
We drank a bottle of Mateus, a rose’, that was popular during our dating age. Many trips around the sun before! It was a revival vintage from our dating days.
So, I paired it with a truncated tomahawk ribeye, grill baked potato, and a French loaf. Wish I had an old petite Syrah instead, but, that bottle of rose is history/gone and the steak, cooked on grill was great. Brad

Meatless Monday success! I made sweet potato and black bean tacos last night and they were killer. I can't embed a photo here to save my life but a photo and the recipe is Here.
I must admit that the two meatless meals prepared so far do tend to "sit better on the tummy" than the meaty versions. We are going to continue Meatless Mondays for awhile. If nothing else it is better on the budget.

Local place has "Big-ass Meatball" on the menu, and that is exactly what you get; one really big meatball, a side bowl of marinara, and a few slices of french bread. And that is all you need.

I really like Asian Fried Rice with any sort of meaty thing in it.
Got all the fixin's planned for tomorrow = Irish Fried Spud.
Big wok of fine dice fried potato, then all the usual degreasers added.
Probably a bag of 31-40 shrimp for the meaty part. Bunch of lemon slices.
Greek? Italian Mixed Herbs? Herb & Garlic? (hamburger seasoning.)

Potato sausage in da U.P. is a big deal and everyone claims they have the best recipe.
They even have fund raisers where different organizations will make it and sell it to raise money. There is a little town 15 miles north of me and their local Lions club has a potato sausage sale about 4 times a year. IMO, theirs is da best !!! People pre-order come from all over for it. Potato sausage with lots of fried onions and some good crusty bread is meal enough for me!!! Oh, and a good batch of funeral beans on da side please !!!

We had an interesting luncheon today. It was lunch with Lidia, as she is touring with her new cookbook about Italian style one pot meals. She told stories and words of encouragement to young folks. A local culinary school made dishes from Lidia’s new cook book, a tough assignment knowing Lidia was going to eat it.
This evening we attended a Tuscan wine tasting at another event. Long day but enjoyed it. Brad

No pics tonight as it was not pretty to look at , but we had crock pot country style ribs, with carrots, onions and sauerkraut with fancy mashed taters on the side. Mix of white and dark pork meat with a little fat in between that was so tender it damn near fell through my fork.!!! So damn simple, but so damn good!!! Good news is, there are leftovers!!!

However, for dessert I made a small pan of bread pudding, by salvaging old madeleines, stale French bread, and ancient frozen dried cherries and currents. Glued together with whole milk, a can of Mexican cream, and a couple of eggs. It was not too bad! Brad
