Moqueca, or Brazilian Fish stew. Similar to ciapino but different spices and very spicy and coconut milk is added. Made it with Walleye filets and scallops.
So simple and sooooooo damn good. Combo of sofrito and spices and hot chili peppers cooled by the coconut milk, cilantro and lime wedges served over cilantro rice.
My new favorite for fish and any seafood I can catch or buy if I have to.

Shopping done. Wong Wing is cookin' tonight. Bunch of egg rolls on cast iron in the oven.
It is a balanced diet because I can stand up straight with an egg roll speared on a fork in each hand for balance.
Must make hoisin-honey-garlic goop and peanut-soy for condiments.
The honey is pertified so will sub brown sugar and see how that goes.

I daren’t show what we had last night. We promised the kids a junk food night as a thank you for them being so good during the lockdown. Cheap chicken Kiev’s, frozen oven chips and frozen onion rings. It was very wrong but very right.

Not surprisingly, this looks similar to cioppino. I love making it, and it makes great leftovers. I don't use coconut milk or sofrito in my cioppino, though.

Chicken drumsticks. Skin off, rubbed with some chopped garlic, a little salt and pepper, and some chopped green onions. Very little olive oil in the pan, just a drop or two, cook the legs for around ten minutes over medium-high heat, turning often, then add two tablespoons of dark soy sauce, two tablespoons of honey, and a couple of teaspoons of sesame seeds. Continue cooking until the soy sauce reduces and the legs are completely coated in the honey and the sesame seeds become toasty and golden.

Doritos corn rounds. The usual hydroxide slaked corn, no preservatives.
Load a cast iron dish and roast those, toast those, for 6 minutes at 375F.
Dump all the fajita meat on that. Dump all the onion and green pepper over that.
Big glass of big red and a fork.
a) I feel a large dose of curry coming on.
b) make a batch of pasta dough to fool with the new Marcato pastabike cutter that arrived today.
New pasta book with 50-60 recipes and sauces today as well.

We’ve been doing ‘homemade’ today. I had a go at making brioche buns for the first time - turned out pretty well, I need to take more care shaping them next time. Esther, my daughter, made the burgers and we all had various combinations of burger/bacon/cheese.
I’m also on my 5th/6th beer on account of grilling - and am ready for a snooze

Chicken sate' tonight. A garlic/curry/honey thing. Brown Basmati rice and a can of Lindsay black olives for snack.
Forgot to put honey on the grocery list* so will sub brown sugar for a change.
* I have a new volunteer grocery shopper. Her interpretation of some things on my grocery list (eg cheese slices)
is just hilarious. It's all edible but sure not what I would have picked out.
Eat food, it's good. To bad that doesn't rhyme well.

Slow cooked half a chicken in an old cast iron skillet. Basmati rice with raisins, Fuji apple from the farmers market, and a touch of jalapenos from last years garden. Topped off with Konriko Bay Island sauce.

Last night I had chicken fingers that were marinated in apple juice, then coated with crushed Fritos and highly seasoned, put in the oven and oven fried for 25 minutes, along with some French fried potatoes that were first coated with a light coat of bacon grease and then with salt, pepper, garlic salt and jalapeno salt. Along with a simple salad, that was supper.
Just talked to son and he was going to grill cheeseburgers. He'd stuffed the hamburger patty with cheese and sweet hot peppers, had the usual lettuce, tomato and onion condiments to go with it. Wish I was there, that sounded so good.
Tonight? Leftovers, fruit, fresh veggies, cottage cheese. Nothing fancy.

We had burgers last night in the cast iron. Swiss cheese, dill & jalapeno pickles, & grainy Dijon mustard on Dutch sourdough buns that I foraged. Frozen PEI onion rings. Easy Peasy.
Tonight roast chicken on the upright chicken holder with fresh herbs & a lemon stuffed in.
Everyone is mentioning Basmati rice! Brian T. Are you using Lumberg Brown ? We love that stuff! If you pre-soak it in stock for an hour before cooking it you get fluffy rice. When i take leftovers for lunch people always like the smell. Like nutty popcorn.

Older daughter is in lockdown with us. She's pescatarian, so not a lot of meat on the menu at the moment. Tonight we had spaghetti with salmon and arugula. Dead easy, very quick, and liked by all.
The recipe is here, but I substitute salmon filets pan-cooked on one side because it's cheaper than hot-smoked, which I usually save for kedgeree. Cooking on one side makes for very crispy skin which my daughter always claims.
I've been baking a lot of sourdough bread too, but that has its own thread.

Pasta with shrimp (prawns) and sundried tomatoes in a pesto cream sauce.
My attempt to recreate a favorite dish from a sadly defunct restaurant. I realized at the end that I'd forgot the pesto, but I added a lit of fresh basil, which made up for it.

Doubled up on last night's curried chicken sate', rice and mixed veg.
So, the plan is a wok-full of really good chicken fried rice tonight. Must scramble a few farm eggs for that.
Left over curry garlic orange juice as a sauce and made another batch of crunchy peanut soy as well.
Grease for the cook tonight will be a fresh bottle of Kraken black rum and cola-la-la.

For me, what's for lunch today is leftovers from last night's dinner.
I made some fried chicken drumettes with lemon pepper seasoning and corn starch in the flour to make them extra crispy, baked potatoes cut into pieces (hey, you don't need to fry everything, or so they tell me), and using leftover flour/egg and buttermilk mixture, I added a little cornmeal, minced celery and onion, and made up some fried corn bread - or hushpuppies. (Really, not to waste anything).
Lunch will be as good as last night's diner I think.

Wow, very nice. My mom and granny taught all of us to cook, and follow recipes (for the most part, until we don't need them anymore). It's an essential life skill that by the time you are my age, you are happy to know. My future son-in-law tells me he chose our family because we are such great cooks, if that says anything other than the boy loves to eat good food. Don't forget to build a family cook book. I began mine more than 20 years ago.
All of mom's recipes died with her. Not a cook book in her house.
While some recipes have come and gone, all of my family favorites are still in mine.
I write in it. Dated references to alterations well worth keeping.
Last major edit was 2/2014 and I'm considering doing one this year.
The neat thing is that I can email the entire book to Staples Printing Center
with instructions for copies, paper weight, etc. They ship the finished books back to me.
One for each member of my little family.
Back to dinner:
Prawn cocktail in an Aussie sauce ( but not too hot).
Steamed mixed veg pumped up with onion and peppers.
Pan-fried dice potato.
The prawns are 16-20 size. I wonder if prawn tacos might be a plan?

Caldo Verde soup today - Portuguese chorizo and cabbage soup
Soften a diced onion in oils in a large pan.
Add 6 large potatoes chopped into 1/2 inch cubes
Add diced dried chorizo and gently stir over medium heat until the potatoes take on an orange colour from the chorizo oil
Add chicken or veg stock (broth?) and simmer until the spuds are soft
Gently squash the potatoes with a masher until the soup thickens (doesn’t have to be really smooth)
Add shredded cabbage/greens/Cavaliero Nero - the darker greens the better
Let it sit for 10 mins to cook the cabbage
It’s not the prettiest of soups but it is absolutely delicious. I’ve just made a batch and can’t wait til tea time
