Dinner tonight is what I planned for last night. Last night got derailed with a BIG TexMex multi bean salad. Just sat at the kitchen counter and forked it in. Martini Rosso tipple.

I'm still messin' with grinding my own beef with my new attachment for Terrys' Kitchen Aid mixer.



I nearly freeze my chuck roast and add extra fat (we're all on the way out anyway Eh?) as i'm grinding it.



We got the cheaper plastic one & it works perfect!



Doing the smash burgers, Thin & crunchy quarter pound double burgers. I have been perfecting my Mexican street corn on the grill too. Queso cheese is about as scarce as gator tail & crawdads up here! if I'm spelling it right BHO spell check has never heard of it either! I have been using dry crumbled feta instead.



Our biggest grocery store in town lists 6 items in every isle. On one isle Pork & Beans is one of the items if that tells you anything!



That means it's sour cream instead of real mexican crema too! Us Cadaidjuns gotta make do!

I bombed the stuffed cucumber.
Mixed 2 cans drained crab with 1 pkg Philly CC and the various herbs and spices.
The CC was at room temp, the mix was easy. Into the fridge overnight, figured that I would
core and stuff the cuke today. Nope, chilled, the Crab Rangoon goop set up HARD.
Should have done it all then into the fridge over night. Slice the cuke, add a spoonful of CR on top.

Had some great sweet corn from Illinois last night and made our first Mexican street corn along side carnitas tacos!!!



If you haven’t had Mexican street corn yet, google it, get in your car and go get the ingredients and you can thank me later!!! Where has this been all my life. Had the chance plenty of times, but just never sounded good.

I used my bread machine to make Raisin Bread. It's great in the morning, toasted with butter, but now I got a loaf of Raisin Bread sitting on the counter.

Need a plan ...

Let some sit overnight for Raisin Bread French Toast tomorrow, that's a given. Make Raisin Bread Pudding for dessert this evening, can't tell you how tasty that is and easy to make.

Thaw some Great Lakes Yellow Perch to fry up, Cranberry Green Beans, steamed vegetables, french fries, cole slaw. That is just to get you in the mood for some Raisin Bread Pudding.

Bread machine, steamer/rice cooker, pressure cooker and slow cook crock pot. The bare minimum for a bachelor's kitchen.

I had a GF with a bread machine. She made a recipe with cottage cheese and dill weed in the bread. That was tasty.

Microwave, Panini press, deep fryer, 4 slice toaster, many woks and pans and pots in mine.
Took me a long time to set aside the rush of the day and putz around for 30-40 minutes to make something I REALLY like to eat.

Home made raisin bread is a thing of beauty. I always needed to put cinnamon in mine.
Hot sliced with soft butter. Who needs supper? Stale a little, toasted with CheezWhiz.
Mine froze OK. That way I didn't have 1/2 a loaf of mold buy the end of the week.
Now I have too much food in the freezer to do it.

Hard to do hot stuff in hot WX, just has no appeal to me. Chilling down fast here from 90 to 50 in a couple more days. Then I do the hot food. Tacos. Burgers & Yam fries with garlic or curry mayo.

Reminds me of the Thanksgiving weekend going to mass at the Newman Centre, University of Toronto, some time in the Seventies. For communion they used bread instead of the usual host. My musical friend, Rob, quipped, "For Thanksgiving, they could at least have used raisin bread!"

Aug 5, 6:30 PM Chili made from the recipe Mary got from her beloved Aunt Peg, and corn on the cob, from a farm about 5 miles from here.
Mary makes very good yogurt, which will be our late-night dessert.

The dog, of course, will sit by the table and out-do Marcel Marceau in the mime routine "I've Not Been Fed For Six Weeks".

We let him lick the plates, after.
Cheaper than wasting money on dish soap!

Great meal on a beautifully warm , dry night in da U.P. overlooking Lake Michigan!!!

I cheated and bought the pork pre-marinated, just added a little spice to it. I work in a restaurant, so I'm good at making quickie meals. Oh, and the man did the grilling thing. He has a real nice touch with the coals.

Pan fried pastrami & Swiss on light rye with a splash of olive oil. Lots of Dijon and Mayo, , seasoned salt, big splash of keputsch on the plate. Bunch of grapes, big dry vermouth on ice.

Preheat oven to 325, then gather ingredients as follows:

2 lbs keilbassy
3/4 C packed brown sugar
1 C applesauce
1 onion chopped (I like sweet Vidalia)

Cut the 'bassy up into bite sized pieces, and fry until browned.

In a small casserole dish combine everything else, then dump the 'bassy in.

Bake at 325 for about 40 minutes, then dig in!

Tonight, Sloppy Jose's!



Sloppy Joes with some Mexican seasonings. Piece of PepperJack cheese on the bottom bun with some pickled Jalapeno rings. On top, diced, fresh tomato and onion and a slather of Guacamole on the top bun to hold your toppings together. Thick, sliced Sweet Potato fries and a garden salad.



Walking over to the neighbor's patio for a refreshing cocktail and an equally refreshing cigar.

I'll fry pork sausages cut into 1" lengths. Near the end, one chopped apple per sausage and tossed with a lot of cinnamon. The apple cooks fast in the hot pork fat.
Can't find a single apple in the whole kitchen, thought I had 6-8 Grannies.

So sausages but in the same orange sauce that I put on breaded and DF calamari. I'll use ancient frozen OJ for a stronger taste. Some Navel orange to fine slice at the end. Honey, onion, green pepper slice, oil, lemon juice, jalapeno Tabasco.

Spencer steak is a West coast term for boneless rib-eye steak. The other names it goes by are Delmonico, beauty steak, market steak and Scotch fillet. Spencer steak (or boneless rib-eye steak) is cut from a prime rib.

Oven-baked potato nuggets. Very generous glug of CabSauv (Chile/Central Valley).



The local pub will deliver burgers, fries and green salads, 5 PM tomorrow.

Very lean beef bacon cheddar burger with lots of fixings.
The meat patty had to be measured. Cooked, it was 1" thick all across and 5" in diameter.
I was expecting a slightly more "fast food" thickness. My mouth is hardly big enough but I rose to the occasion and finished it all off.

I know this sounds crazy coming from me, and ya doesn’t have to go tell everybody, but, I had a veggie dinner the last 2 nights!!! Yikes, WTH is happening to me?
Actually , just taking advantage of the fresh seasonal stuff when it’s at its best.
Fresh cucumber salad with cherry tomatoes and onions, grilled onion ,zucchini and mushroom kabobs, and fresh Wisconsin Corn on da cob !!! It was excellent!!!
I did cheat a little when she wasn’t looking and had a couple venison sticks (to stir my drink with ) while workin da grill !!!

Imagining they wouldn't be so BIG, I ordered 2 burgers with fries and salad.
It was all I could do to eat one order last night.
Tonight, I'm going to deconstruct the second burger. Make a nice curry, dice the burger meat and eat the bun & salad as sides. The fries? Well, they kinda got picked over at noon today.

I am not sure what is for dinner.  Since our air conditioning is fubar,  probably carryout?  However, I did make a CI skillet peach cobbler, on the grill, to avoid heating the house above the 88 it is now.  102 outside.  I used a few peaches from our Colorado peaches box, that we buy about this time each year.  If I don't go out and buy some vanilla ice cream, we will just top with heavy cream, that we have. The peach cobbler may have a bit of Smokey flavor, from the grill wood chip box.  I am ok with that, from my campfire cobbler days so long ago, on Boy Scout camp outs. Brad

Last night I had fried oysters, calamari, baked potato, and fresh biscuits at a bay side restaurant in a gritty little town named Highlands in Northern New Jersey. You could see the New York City skyline from the nearby beach. It was my first visit to the shore this summer, and the cool breeze off the ocean felt good.

Last night was a beautiful bowl of haddock chowder at Moody's Diner on our way to the Jerry Douglas show in "Booze"bay.I hadn't been inside of Moody's for 15-20 years.Gramp used to stop in there,regularly.
They're still putting out fine,authentic Maine cooking along with 10 pies to choose from at all times.

tonight I'm home and just started stacking a sandwich with whatever I noticed when I opened the fridge door.
Pepperidge farm wheat bread,blue cheese dressing,spring mix greens,roast beef,3 bean salad,smoked chicken,cheddar cheese,mayo and 'nother slice of PFWB.
Haagen Daaz on a stick for dessert and a cup of decaf green tea.

I have vegetarian daughter and brother.  I am ok with vegetarian dinners, on occasion, but I do miss the meat!  And, yes I will cheat as well.  Though usually when my daughter cooks, she will cook some chicken for my plate. God bless her , eh. Brad
