Friends were coming over for pool and pizza, but had to cancel at the last minute. But the pizzas had already been ordered and duly delivered. We ate it, of course, but had lots of leftovers. So breakfast was reheated pizza (mushroom and red pepper). Works for me.

Savory chicken crepes with shallots and mushrooms in a tarragon white wine sauce. Unfortunately, the crepes (pre-fab, from the grocery store) basically disintegrated when touched by the hot filling. In retrospect, I should have let it cool first, but that would have delayed dinner by another hour...

My favourite kind of cooking. spatchcock chicken (with hot dirty bird) sweet peppers, asparagus and falafels cooked over applewood from my dads garden - any cooking that involves, fire, beer and an axe is always good for the soul.

Falafel on the grill or open fire........who’d a thunk!! I get on a falafel kick every now and then, but recently been on a Hush Puppy terror!!! Having been in Tennessee and North Carolina a few weeks ago, I ate the best hush puppies I ever had at a BBQ place in Townsend , TN. They were loaded with onion and was almost a cross between a hush puppy and an onion ring!!! A bowl full of those with an icy cold beer(s) is on my agenda for next weekend. I think the perfect accompaniment would be one of those spatchcocked chickens !!! Thanks for the idea Jonty!!!

Vitamin P... I stopped at a butchers shops I’d never been to before today, to get some lunch on my way to some friends house. After going back to the car and eating the pies we bought, I had to go back to the shop because the pork, chicken and stuffing pie (shown on the right) was the best pie I’ve eaten in absolutely ages - there was no way I was turning up at my buddy’s house without a couple for him to try.... my goodness they were amazing!

Winner, winner, chicken curry dinner. This is an interesting one, since the recipe comes from Macau. Coconut milk and fish sauce give it a Thai flavor while the recipe calls for a Madras-style curry powder. So much cultural appropriation that it wouldn’t pass muster on the BBC, but damn good eatin’. Served with plain rice and steamed greenie beanies. Takes a long time to cook but requires fairly minimal supervision, which makes it ideal for pre-dinner cocktails.

A big bag of frozen prawns keeps calling my name, too.
Must attack a tray of frozen calamari tubes = cold, marinated Greek calamari.
That is a serious hot weather salad dish.

Another nice save Jonty! On the Primo forum I've seen posts where new owners have had complaints about the meat being too smokey. The advise was.. "Cut back on the smoke wood" New owners came back with.
"I didn't add any smoke wood just hardwood lump!" Some people aren't used to the smokey goodness!

I take the battery out of the kitchen smoke alarm.
Ribs and hens with rubs and in the oven 275 for 3 hrs+.
I have a Breville smoke pistol. Puts out a good few puffs of smoke from apple wood sawdust.
I can fill the oven, cracking the door for 20 seconds. Not exactly my old outdoor smoker BBQ but just enough ( 3X or 4X) that there's a hint of smoke taste.

Side by side eating test...Recently I moved my older brother to an assisted living complex. One of his biggest concerns was what remained of his 10-pack of steaks he would be leaving behind.
I told him I would take them home and save them for having him over and I would grill them.
So I bought a big choice bone-in ribeye, and thawed one of his choice chuck steaks.
Being suspicious of a "chuck steak" I used my multi-spike tenderizing tool and poked it a bunch. I cooked them together in my usual manor, searing both sides until reaching md-rare, then my usual slicing them all up and buttering. I kept them separate.
To my surprise his chuck steak was good. Not quite as good as our ribeye, but if I see choice chuck steaks at a good price, I will buy some, for sure. Brad

Prime rib-the prime in prime rib is really not a grade, but more the cut.
Yet USDA outlines a beef grade based on marbling...Select (fairly lean), Choice (fairly well marbled), and the best is Prime (abundant marbling). Prime is a bit hard to find at many grocery stores, but good restaurants will use prime grades. There is an industrial grade stores use named "sterling" that in my experience around here is tweener of choice and prime.

Jonty, a BTW....Around here cattle are typically finished in feedlots on corn for three months. Or used to be.
Though, a lot of beef is now sold as "grass fed". The healthy beef. Not for me though.
