Our cocktail was a bit of a culinary oxymoron for that dinner. We had a Compari Cocktail aperitif earlier: with Compari, vodka, orange bitters, and a lemon peel. Ice tea with the dinner a nice change, eh. Brad

Wife’s birthday today, started a typical weekend late breakfast. Tonight a daughter is preparing an Asian dinner. A story here. My wife grew up in small towns in Kansas. “Chinese” restaurants were a rarity back then in rural Midwest small towns. Her mother, via Germany, was raised in NYC. She always made my wife Chinese food for her Lunar Birthday. It was very deal! And that has continued all these decades.

Leftover smoked pork shoulder, sweet corn, bag o' Caesar Salad, made some ez biscuits because there was the most beautiful hunk of fat on the meat, with a nice, thick bark on it from the smoker! Grabbed my Italian coffee maker, whipped up some Red Eye Gravy!
Let's review:
Pork fat
Salt
Sugar
Caffeine
OK. Cholesterol, sodium, carbs. Good thing there was some caffeine to keep me from lapsing into a food coma. A dietary disaster, but since I'm gonna go ahead and eat it, I'm goin' all in.
Cocktail with dinner? Don't mind if I do, Fig.
Dark & Stormy: (x2)
3 oz of a quality ginger beer
2 oz of a quality dark rum
Generous splash of lime Juice
Dessert: (1 serving, w/xtra scoop)
Black Raspberry Ice Cream w/little bits of dark chocolate.
Post supper:
Retreat into the parlor with an 18 year old scotch and a nice, full-bodied Nicaraguan cigar.
Tonight's movie, one of those Fast and Furious flicks. It's the one with the cool cars and Vin Diesel beats up some guys and lots of stuff 'splodes. (I hear it's a good one)
"If the hurricane is about to come ashore, and it's too late to evacuate, I say throw a party! "~csrat

It’s a family tradition here that we always celebrate rinemb’s wife’s birthday with some BBQ - happy birthday Mrs R!
Beef skirt steak, chicken thighs (w/dirty bird rub fig) along with bbq tofu and veggie sausages for the significant vegetarian in my life. All served up with baked potatoes and a cucumber free salad …. We to pick the cucumber out of the bottom of the fridge and my thumb disappeared right through it!!

Now that you all know my wife so well, I guess I should personalize her a bit. Wife of 49.5 years, her name is Marilyn. Pic isMarilyn and her “Chinese” dinner, that is actually Korean-ish stuff. She would whack me for including her in the pic, but I am too lazy to crop.

On Tuesday, I made chicken noodle soup that resulted in half a chicken's-worth of leftover meat. Somewhere a voice whispered, "enchiladas", and so I did. There were no tortillas in the larder, so I went to the grocery and bought the stipulated 8-pack. Imagine my surprise when rolling them up that the bag only contained six. Stealth price hike or honest mistake? Who knows, but they still tasted good.

Good use of extra chicken! I will roll up about anything into tortillas hanging around. Or just get some spotty browning on both sides in a hot dry CI skillet, then smear it with butter and eat them. Best to fold up the back end before biting into. Brad

I are a pig. I confess.
Made up egg salad sandwich filling last night. 4 HB eggs plus the fixin's.
Poured a BIG glass of a cheap crisp Chardonnay.
Sat at the kitchen counter with a bag of tortilla corn rounds and ate and drank it all.
Slept very comfortably all night long (except for the cat killing toys out in the hall.)
Might finally get to pasta (spaghettini) with citrus/Parmesan sauce.
Need some meaty thing to go with it. "Eat the freezer."
With schools that were closed, Canadian dairy producers dumped some 10 million liters

Mrs. Slammer is out of town for a few days so Ol Slammer gets to eat whatever he wants!!! Didn’t feel like Bacon and eggs late this morning but wanted something warm and hearty before I go outside and plow the yard and a few of the neighbors driveways.
Didn’t feel like going to the store or going out so I made one of my ol favs !!!
SHi# on a shingle, aka chipped beef on toast. How can a few simple ingredients taste so damn good??? I had a late uncle who was a U.S. Marine that loved SOS so much in the service he would eat anyones that didn’t like it. He taught me how to make it and it was his favorite meal right up to his end !!! One of mine too and I think of him every time I make it !!! BTW, my first plate of it was almost as good as the 2nd !!!

Chicken Fried Steak on a crispy, corn waffle.
Sometimes I forget that making CFS isn't hard at all. Diced up some jalapenos for the waffles and when I realized I had some leftover, I shoved some cheddar and some cream cheese in them and battered them up and they fried up nicely.
Nice comfort food, crispy waffle, right out of the iron, CFS on top, ladle on the gravy. I ate too much, I think. (I know)
Getting into the pantry for the Jiffy Mix, I found a Tempranillo (Spanish red wine/dry, but with plum & notes of blk cherry) in my pantry I'd forgotten about. Must say it paired pretty well, and red wine is good for digestion.

We cooked the package of two tenderloins, plenty for leftovers. We usually reinvent our leftovers, so any ideas welcome. The tenderloin was well seasoned with a throw together basic spice combo. Seared then baked. A lot of directions we should be able to go, eh.

OK, fine! I needed SOME excuse for drinking the bottle myself!
No one around here is into wine, so if I come across a good bottle I pretty much have to crawl in to it myself.
I have no regrets! (about wine, that is)

Since these little tenderloins usually come in a 2-pack, I cooked them both. I will leave town on a job, so my wife with get to enjoy the leftovers. She will get several more meals out of the 1-1/2 loins leftover. Meanwhile, I will eat like cr@p for a week.
I am wondering if one could sear them more, by continuously rolling them in the hot skillet for a longer time and eat them a bit more rare in center, instead of any baking? Brad

My kind of meal Rich !!! Nice northern and the only time I keep them is in winter through the ice. I consider myself an expert at fileting them without ANY bones. I hate bones, but love pike. So many people throw em back because they don’t know how to get rid of the Y-bones. I’m ok with that……..more for me!!! They are as good as any white flaky fish and better than most.
