Bream. I couldn't think of the name. It does look smoked or dried. Sunfish, Bluegills & pumpkin seeds all fit in there with rock bass & Oswego bass. Laterally compressed.
Terry said when they were salmon fishing & tourists would ask how many mackerel they could keep. They would say one hundred! Or all of them! They didn't want them to foul their lines. I like them canned. smoked or cooked fresh over the coals rubbed up with coarse salt & pepper.

Some smoker fodder for today: ribs of beef, and chicken and duck breasts. We have some steelhead trout as well, not pictured. We like to do a bunch of stuff all at once, so the coals don't go to waste...

Chicken and duck breasts in a hanging mesh basket (made for storing vegetables) that I adapted for deep frying. It also works for hanging in a barrel smoker.

Chicken pot pies, cooked from frozen.
Push 2 tbsp frozen peas into the pies through the top crust.
Peas cook, pies cool, supper is ready.
Old favorite from my working days. Takes 30+ minutes at 350F or something like that.
The deal is, you can't speed it up. You have to relax, slow down, have a slurp and
let the mess and stink of the work day slide off. Worked every time.

Yesterday Terry said "Something Easy" Chicken wings & frozen P.E.I. potato wedgies it is then!
She made salad too but I was saving room for the main event.
I used some of my 12 herbs & spices mix & a good bit of the Buffalo wing dust that Al & Liz sent.
Terry dunks them in egg & I get a new paper bag & dump our flour/spice mix in & shake them up to coat them.
Wings on a rack on a flat pan with parchment paper & in the oven. Fries directly on a baking sheet on another rack. A light spritz with some Pam olive oil spray & they might be the best wings ever!
They were dark brown, super crunchy on the outside & juicy inside. The best so far. Not deep fried but pretty darn close!

The Mrs. cooked a roast beef with baked potato and peas - and gravy, of course, lots of it. Oh, she put a couple of onions in with the roast, too, one for each of us.

Pot roast brisket last night. It’s not quite the same cut as a US brisket, but reacts the same to low and slow cooking. Usually thinner than across the pond so it’s generally sold rolled into a ‘joint’.

No pics. Last night a quick, but great meal. One 3 lb fresh chicken, old carrots, old small potatoes. Seasoning only salt and pepper. A quarter onion and a clove garlic.
Dried bird, while cast iron skillet in oven preheating to 450F, prepped carrots , quartered taters to layer evenly with carrots. Oiled and seasoned veggies, seasoned bird and put onion wedge and garlic in cavity, and trussed it. Smeared a trace of oil in hot skillet, bedded single layer of veggies in, then nested bird on veggies.
One hour in the 450 oven. Intended to pull at 155 internal in thick thigh-to rest up to 165. But at one hour bird tested out 170 or so. (could have checked it at 45 min, but chair too comfortable, and the wheated whisky too good.) Skin was crisped, meat was very moist.
Whacked it into quarters. Wife did a quick skillet gravy.
Simple, no fuss, 75 min from turning oven on to the plate.

Tonight, another quick, but nice dinner. About 30 minutes from pan to plate.
Local smoked pork chops oiled liberally sprinkled with fresh chopped rosemary and browned in skillet. Roast savoy cabbage wedges and buttered. With wide Alsace noodles, boiled and buttered.

Spring is coming in my district. Have my usual craving for fish.
Any fish, all fish, every day fish, I can eat an embarrassing amount of all things fishy.
Went out for supper and got a custom built seafood plate. Spicy calamari with tzatziki
(love citrus sauce, too), one piece of DF fish in house batter. Lemon wedge and tartar on the side.
Potato fries to do a taste test with several apple-wood smoked salts. Generous dish of house cole slaw. One beer, a Sleeman Ale. Ate with the flies ( the entire place was empty except for me.)
Crab sandwich for breakfast today.

It’s Mother’s Day in the U.K. today. Mum requested ‘high tea’ so a quick call to a friend with a B&B (who is doing takeaway meals etc whilst he is closed for lockdown) and look what turned up.
I’m now off to,watch the opening and closing credits of a movie - the kids know when to turn the volume up to drown out my snoring.

My mom used to make pizza burgers for us kids when we were in grade school. Hamburger buns stuffed with a mixture of Ground beef, onions, chili sauce, pasta sauce (or Campbell's tomato soup) chunks of Mozzarella, some parmesan and some spices wrapped individually in foil and baked in the oven. I still love it some 4-5 decades later. This is a recipe I recently got from my mom and she giggled with delight that I asked for it.

Smashing the Like button here Brad! I bought a big bag of BBQ Frito Corn chips.
I've been going on about the walkin' taco. a big scoop of chili dumped into a bag of Frito Lay BBQ corn chips with shredded Tex Mex cheese & diced onion. The Frito Pie sounds interesting too.
I googled Fritos bbq corn chips & they said they were discontinued. I can still get them!
I bought 2 different kinds of Stag Chili but we ate all the corn chips! Halloween sized bags would be perfect.

We had to hack and sub a bit to make the chicken tortilla dump. Used some fried corn tortilla rounds- busted up. Diced canned toms only-so added small can green chili's and some diced up onion. On the plate added salsa along with the sour cream.

Went old school comfort food tonight and it was amazing!!! Sorry, no pics!!!
Venison meatloaf and scalloped potatoes (almost au gratin but not a lot of cheese) .
The meatloaf was one of my best and the scalloped potatoes bubbled over the top of the pan making a mess........which my Aunt who makes the best scalloped taters says is essential in making a good tater dish. The burnt edges of the taters in the cream sauce was just the way I hoped for!!! Threw a little fresh frozen cut off the cob corn from last fall on the side and mad a pig of myself !!!
Good news is there is leftovers.........yeah I know Jonty, but I did it on purpose as I have a busy week this week!!! All served with a few Milk Stouts from Left Hand Brewery!!!

And, a bottle of Juel rrd blend by Jessup Cellars, of California. Brad (our local fish monger has dry scallops for 2.00 off per lb. I hope to get there tomorrow.)

I find it hard to get REALLY EXCITED about another supper by myself.
I don't even make my own pasta or pizza anymore. I make do with store bread.
If anything, I've gone out to eat more often in the past 6 months than in the past 6 years.

Tonight was special, my wife and MIL made a traditional German dinner, rolanden and rotkohl with mashies.
Rolanden is flank steak hammered by the butcher and rolled up with bacon and pickles inside.
Rotkohl is purple cabbage cooked with apples.

Last night, in honor of Mr. Patrick, I made New England Boiled Dinner, or, as some like to call it, Corned Beef and Cabbage. It's been a while since we had a big hunk of meat at the table, and, boy, was it good. SWMBO doesn't often go for a full plate of seconds, but this time she did. And plenty of leftovers for tonight and corned beef hash for breakfast tomorrow.
And just for Brad, it's on Fiestaware.
