Last night was homemade Detroit Style Pizza!!! The Mrs. and I usually like a thin and crispy vs. thick crust style pizza, but the Detroit style is really starting to grow on us.
I think it’s the crispy charred sides and bottom and liking the sauce on top. I mean, never had a truly bad pizza, but some just are stand outs and the Detroit is starting to take the lead!!!

Detroit-style seems to be the flavor of the moment — I keep seeing and hearing about it. It looks like a middle ground between NY-style and Chicago-style. I’ve never liked the latter, but I grew up with thin crust, and that’s what I’ll love ‘til I die.

Last night was the eighth and final night of Hanukkah, so I finally got around to making latkes. I used a new method in which I shredded the potatoes in the whizzer and then took out half the shreds and blended the rest with the onion. The result was a crunch exterior from the shreds and a creamy interior from the blend. Yummy! No pics because they didn’t hang around.

I think I've finally mastered the latke. Trick is to press as much water as possible from the potato before mixing in the onion, egg and matzoh meal. We're trying to eat less meat. So yesterday was Confusion Cuisine - latkes with bok choi in black bean sauce and mango pickle.

Detroit style is IMO a cross between pan style and Chicago , but a lighter airier crust than Chicago style. Cheese goes right on top of crust consisting of 1/2 whole milk mozzarella and 1/2 Wisconsin brick cheese. Then toppings of choice and then sauce globbed on top. The sauce gets thick and almost caramalized from the high heat oven at 525 degrees. Edges get charred and crispy along with bottom and the crust is light and airy but also gooey from the cheese. I’m really torn as to which is best as I like them all and like to switch it up.
My son has a 5/8 “ thick steel plate in his oven and makes a 18” New York style that is better than any I’ve had. Simply amazing and always a treat when we visit him in Minnesota (have yet to find good pizza ANYWHERE in Minnesota).
Detroit style does seem to be in the news a lot lately and for good reason!!!

Definitely need to press out the water. I have a dedicated kitchen towel for such things. It's now dyed a bleached purple from the anthocyanins.

The Memphis Blues BBQ House (Vancouver, BC) cookbook has several good slaw recipes.
I bought one of those deadly French mandoline things and can shred any slaw in seconds
(after 30 minutes to get the machine set up).

Habit I suppose, but I need whole grain Dijon-style mustard in mine.

Next best is in our local pub, "The Grizzly."
Always ask for 2X slaw, no matter what else I ask for from their kitchen.

Did up my crab & cream cheese mushroom cap muck in a double boiler last night over spaghettini.
Got the Tabasco and mustard just right. Resets my thermostat to about 90F.
There are nights when left overs can't be done better.

I'm brining a rack of baby backs to make Honey Ham Ribs for the Grey Cup tomorrow. Terry will make chicken wings & probably veggies & dip there'll be leftovers to go with our work lunches on Monday.

Pizza again: salsa, onion, tomato, red pepper, green pepper, pepperoni, maybe salami, Tex-Mex grated 3 cheese mix with chili flakes in it. 20 minutes at 425F, naan bread for the pizza crust.
I plan to do 2 or 3 for just 10 minutes to set the cheese so I can freeze them for another night.

Tonight was a vat of homemade Mac n Cheese in the Dutch oven!!! Sharp cheddar, Swiss and Colby cheeses mixed with a Parmesan bechamel , Al dente rigatoni pasta and crispy fried onion topping!!! 45 minutes at 400 and 15 minute rest and it was bubbly gooey magic with crispy bits on top and some crunchy burnt cheese on bottom and sides!!! Let’s just say I had to loosen the string on my sweat pants a bit !!!

We're having some small but thick bone in pork chops in the cast iron. Herbs,onions & garlic seared up & finished off in the oven with creamy quinoa pasta. There's always salad too.



I made grilled cheese & smoked ham sandwiches & Habitant pea soup out of a can last night.



I got some really nice locally made chocolate as a gift yesterday . Have to ration it!

Always amazes me as to how different every family Xmas cookie tradition is and how even the same named cookie looks and tastes different from family to family. I’m not a huge cookie fan, but I do have a couple favorites and have a hard time resisting a good molasses cookie. Nothing better on Xmas morning than a good cup of boozy Irish coffee with a handful of molasses cookies……….when she’s not lookin !!!

The cupped undersides of the Naan breads were the key to the pizza builds.
Two on a sheet @425F scorched the "bottoms" but no big deal, if you don't look.
15 minute reheats went as hoped for.

Gotta plan some soupy things: we are in for a extreme cold and snowy spell, til New Year's is forecast.

Burgers here. Veggie in a giant mushroom bun with haloumi for my wife and beef for me. My son had a massive double burger with two cheeses, chorizo and peppers but it didn’t last long enough to get a pic.

Stop & Shop had CHEAP prime ribs! (6.99/lb.) So I picked one up and we cut it into cowboy steaks. I cooked one outside over charcoal tonight with garlic salt, lots of cracked black pepper, and some Cosmo Q Cow Cover. We had rice pilaf on the side. As this piece of beef was unusually thick, I put down a piece of foil on the grill so it wouldn't brown too quickly. When we were cooking the yard smelled like a posh restaurant!

Tonight was cabbage and smoked kielbasa soup. Had a huge pot luck at work today and tried to keep up with the young ones!!! All they could do was watch and learn.
Tomorrow starts with Kentucky roast coffee, aka, coffee with Kesslers in it, and maybe some scrambled eggs. No Lunch, but some afternoon snacks maybe. Dinner is a huge Porterhouse steak on da grill, seasoned with Cow Cover, Mushroom Wellington cups (Martha Stewart’s recipe) and a salad . Of course adult libations throughout the course of the day. Saturday, Christmas Day will start with mimosas , Kentucky roast and a French toast casserole/bake. Then early afternoon libations and then the Hors-d’oeurves start. Homemade Italian meatballs, huge shrimp cocktails, Swiss cheese fondue, raw beef and onions on rye , veggies and dip, venison steak bites, Bagna Cauda with Italian bread ( the best of all) and an assorted cookie plate for dessert, all to be enjoyed during the Packer Game!!! Late night Brandy Alexander’s or Grasshoppers to settle everything. Sunday will be couch day and leftovers and NO cooking other than reheating in da microwave!!!

@4C per batch, I still intend to make several hits of curried walnuts.

Big Chinese take-out will cover a couple of days, cold left overs remind me of my dissipated university days.

Mostly going to be freezer surprise but I run out of trimmings very quickly. Seems the only way to eat fresh(?) food is to buy less and eat it fast. Just wuffed down a pomegranate. Not in several years. What a treat. Only took 60+ years to learn how to peel one.

Tempted to thaw a meat rabbit and oven roast it with BBQ apple juice mop and seasonings and some apple wood smoke. No family moving to get together this year so might as well try some experimental dinners.

Nice thick rib eye steaks cooking sous vide with garlic & fresh herbs. Steak Friday on Thursday because we're done for the week! Cavendish potato wedgies (frozen) & some nice Mexican asparagus . Two bucks a bundle for thin tender spears!



We found a 12 lb. fresh turkey that we will do up with our own twist on stuffing & roasted root veggies.



I discovered Green Bean Casserole from our American neighbours & Rachel Ray stuffin' muffins on my own!



We have one friend dropping over for Christmas dinner that brings his own Tupperware!. He's skinny & gets a few good meals to go. We send all the leftovers home with him except some turkey & the carcass to make soup.



We're getting too fat! It's all gonna change in the New Year!

You fry up some bacon and dice onion and build a thick curry sauce with crushed tomatoes and green bean dice. No coconut, no garlic. Don't let it get too runny ( wheat flour?)

Oh my!!! Merry Christmas to me and da Mrs.!!!
Cow cover rubbed Porterhouse and NY strip steaks done med rare, Hassleback Potatoes, Cranberry Green Beans, Mushroom Wellington (the highlight) Parsley Citris Salad and a couple cocktails to wash it all down. Good news is, plenty of leftovers for breakfast with a couple fried eggs!!!
Mrs. Slammer made a chocolate Yule Log for dessert and just waiting for the dust to settle before we indulge on that !!!

Peel the taters except the flattest side and use that as the bottom. Place the tater between two wooden spoons . The spoons act as a stop before cutting all the way through. Sharp knife and just start cutting . Rub em down with olive oil and sprinkle heavy with kosher salt. 425 F for 1 1/4 hours. Easy easy!!!
