Chicken goujons tonight, made by two very accomplished chefs - I know they will be the very best I’ve ever tasted.... as will the the G&Ts which are being made by our trainee cocktail waitress

My charming partner gifted me quite a few bags of frozen plums, apricots and apple pieces.
I bought pork sausages today.
Get them chopped and cooking . The apple was cooked up as chunky pie filling. No matter.
Sausage chunks and cinnamon apple chunks ( instead of the bother of apple sauce.)
A sack of baby golf-ball-sized little potatoes, 3 or 4 varieties. I'll bake a dozen.
Butter and Italina mixed herbs ought to go down well.
The plums and apricots will get stewed up and mashed/smashed for pancake & waffle toppings.

Another Keag Combo Pizza.
I'm so lazy, but these things are so good.

By the time that I got to the kitchen this morning, breakfast turned into two very thick and savory egg salad sandwiches. Tabasco jalapeno makes them taste right.
Dinner could be a few tacos with very fine dice and seasoned bacon-fried chicken.
No lettuce, shredded green pepper.
bubbalouie - Posted - 07/26/2020: 18:51:30
We got no bun turkey burgers. roasted sweet potato wedgies with chipotle aioli & broccoli.
Melted havarti on the burgers, We]re gonna starve!!

The Mrs. made butter chicken on rice with naan bread. I had vanilla ice cream for dessert. Later on I had a Stewart's black cherry soda.

Pork pie later, I’ve just spent a very enjoyable morning with a butcher of 49 years, learning to make them.

Was gifted a couple of beautiful eggplants from a friend's garden over the weekend. Because it's Monday I was a bit lazy and made "deconstructed" eggplant parmigiana: Make a tomato sauce, roast the eggplant until well caramelized, cook spaghetti, grate mozzarella, and combine them all with some chopped basil. Good eating.
Brian T - Posted - 07/27/2020: 22:23:13
figmo:
Cut the eggplant in half lengthwise and score deeply in a criss cross.
Rub in some olive oil and some sharp balsamic vinegar ( not the really good stuff*).
Cut faces down on a really HOT grill to caramelize the surface.
Then belly down on medium heat to cook.
Off the grill, bunch of cinnamon, mint and crumbled Feta cheese.
I know, I know. About as exciting as zucchini.
*good balsamic vinegars here are running $60.00/liter and up. Like vintage wines.
I have a fondness for balsamic that's all doped up with raspberries.

I get it. It's a vegetable that can be seriously abused in the wrong hands. I grew up eating it, but as a carnivore with two vegetarian daughters, I've learned how to make it taste fairly meaty. The more you cook it down in dry heat, the meatier it gets. Let it caramelize and throw some garlic on it and you've got something that's pretty tasty. It also didn't hurt that the eggplant I had last night were fresh from the garden and were an Italian variety that is a lot denser than the standard grocery store giant water bags we usually get.

Damn You Jonty !!!
I really didn't need to see those pics when lunch is 5 hours away from now. Look amazing!!! We have pork pies here in the U.P., but pretty much the same as a Pasty in a cake pan instead of a Pasty form. More pork and less veggies though.
I'm thinking your pork pie would be amazing made with Italian sausage and a nice marinara poured over to change it up. Pretty much like a glorified sausage roll .
I gotta go eat now, Later !!!
Slammer!!!
steve davis - Posted - 07/29/2020: 09:18:27
The rest of last night's crabmeat roll and onion rings.
I gotta bother to go to the store for some salad greens.
Brian T - Posted - 07/29/2020: 18:16:21
Breakfast began with a large chunk of very refreshing watermelon. Wonderful.
Gotta do that again.
Supper will be the rest of the tortelloni ( big tortellini) in cheese sauce with chopped tomato.
Might have to build a batch of baked crab Rangoon and stretch supper out in time.
Now I need a slurp and it's "tuna-time" for Heidi-cat.

Our little village family food businesses have been hit pretty hard with closures (even bad water).
Now that they can open again, I'm trying to get out to each of them, one per week.
Tonight will be "Sue and Me," for fish & chips and a side of onion rings.

Just googled Klondike Bar - I think it's actually spelled 'choc ice'...... either way, I reckon one on top of some pumpkin pie would be pretty good!

Head lettuce wraps around egg salad and shredded green pepper.
It is finally pouring rain all around and on top of my place. Nice and windy storm, too.
Give this mosquito plague some exhausting exercise.
There's a suspect little puddle in the kitchen on the floor by the stove.
Did I spill something? Has the roof (5 yrs) let go? Cat pee?
Brian T - Posted - 08/04/2020: 01:40:29
The lettuce was a really good crunch against the egg salad on a hot evening.
Never knew I could scarf down 4 HB farm eggs so fast.
Cooler and a steady rain. Hope it piddles all night long.

Fish n Chips from The Whale's Tooth Pub at Lincolnville Beach.
We played from 5-8 and they gave us dinner to go along with money.

Leftover pasta with brat in cheese/herb/raw tomato sauce. I expected it would be good.
Tomorrow, believe I will slide over to the Grizz (Grizzly = pub) and find my usual perch for F&C
or maybe a big hit of calamari.

I don't want to start another shipstorm of controversy but we're having sous vide steaks again!
If I can get steak, fried mushrooms, fried onions & onion rings every Friday & She loves it. I'm in.
It's just an aquarium heater with a pump. Throw the meat in a Zip lock with some spices & fresh herbs & smashed garlic cloves. Ignore for 3 hours, dry them off & toss in a cracking hot cast iron with more rosemary & garlic.
You Won't Be Sorry.

I really like the sound of this Bob. I can't justify buying one at the moment as I'm in the middle of building a new kitchen (converting a dining room) but once it's done I think I might get one of these. I always manage to get my wife's steak just slightly wrong and this could be my way out.
Wet Spaniel - Posted - 08/08/2020: 14:33:22
Didn’t take any pics of it as a friend cooked it and it would have seemed a little weird. Tonight I had rabbit paella and I have to say that it was probably the best paella I’ve ever had - I’ve eaten it in Spain plenty of times and I enjoy cooking it myself but my friend beat me hands down.
The funny thing was that he has asked me to shoot some rabbits that are invading his vegetable patch and I haven’t got around to it yet so he had to buy the rabbit... whilst we were eating it in his garden, we were watching the bunnies hop on over to his broccoli plants. Oops!
Brian T - Posted - 08/08/2020: 14:58:19
Cheese & sauerkraut perogi with both onions and bacon. Lots of sour cream.
Steamed fresh beet greens with steamed rainbow of carrots.
The beet roots are a bit dainty yet but in they go. Leftovers in fried rice tomorrow.
I even bought some ale !!!!! to go with it all.
Summer is over.
Cold and rainy, furnace was coming on and we can see fresh snow up top this morning.
I need a hot supper.

Bacon cheeseburgers at the Thruway Restaurant* in Carleton Place on the way home from Ottawa. No room for dessert.
*I don't know why they call it "Thruway" - Highway 7 becomes a city street before it hits town. To the west it becomes a two-lane highway.

Oh son! I made butter beans and cornbread tonight!
Lima beans brought to a boil and then taken off the fire to sit for an hour...to get the farts out.
Fried cut up carrots, celery, and onion in bacon grease in a skillet.
Added chicken broth, garlic, salt and pepper, a slab of bacon... 1/2 a stick of butter...let it simmer for an hour.
Dumped this mixture back into the bean pot and simmered everything for 90 mins.
Made some skillet cornbread from scratch. Right out of the oven and slathered with butter...soooo dang tasty with these beans!!!
Best beans I’ve ever made! And minimal farting.
Dow
Brian T - Posted - 08/10/2020: 01:35:45
Gawd! I hate to report that I have left over bacon. I did my best.
Dow, a question if it's allowed. I was watching and listening to a presentation from Brian Shul, one of the SR-71 pilots. He spoke of the consequences of a really gassy meal preflight, then a climb through 75,000 feet.
What was the atm air pressure in your boat?
I expect that it must have been adjustable within the pressure hull with depth and speed.
