Gravy made from a moose roast is a taste you never forget. That's how you learn what gravy is really supposed to taste like. MEAT!


I'm surprised. A 1200 lb steer yields ~500 lbs. I've been up close to both steers and moose - maybe 30 feet from one on a lake in Maine - and moose are much bigger. Maybe it's just that they're taller?

Taller and sort of left/right skinny when compared with cattle. Their back ends are not very wide.

I've never seen a moose steak. Roasts, burger and stir fry that can be kebabed.
Always chunked up the bison roasts for kebabs. Having 4 dozen s/s skewers has some benefit.

The last big piece of bison that I cut up, I did it with first strike flint flakes.
I suddenly felt I knew how it was, 10,000 years ago. Very odd mental condition.

Yankee Pot Roast tonight - thanks for the suggestion! Apparently what makes it Yankee is the addition of root vegetables. We were also inundated with 4 enormous bluefish last night (no pics, sorry) and we are smoking them today.

Bluefish filets, out of the smoker this morning and ready to be packaged up. Almost a jerky-like texture; very nice as an appetizer with sharp cheese and crackers.

I'll be fishing for Steelhead in the Big Lake soon. They smoke beautifully and when I do well for myself a gift basket full of Michigan apples and smoked Steelhead makes a great Christmas gift basket.

Kids cooked me a ‘full English’ for dinner last night. Well, full English plus one American addition of the hash browns. The bread fried in bacon grease was (literally) do die for. The best thing about having a breakfast fir dinner is being able to wash it down with a beer - it feels really naughtysmiley

Craig, what sort of size do they get to in the wild? They're not a native fish here but are commonly bred to go into stocked fishing lakes.  As they are usually 'put and take' they don't tend to get chance to grow past their typical 1lb - 2lb size they were out into the lake at.

Generally I catch Steelies at 6-9 pounds. The first year I went fishing for them I caught a 12 pounder that promptly caused my friend to up me with a 14 pound fish.

6-9lbs would be a lovely size for curing and cold smoking - thanks for the info Craig.

I work with people from different parts of the world and one from Brazil told me about the stuffed pumpkin.   

It's actually not hard to make and not too much prep time.   It is very good with a lot of flavors.

Ask your Brazilian friend about Moqueca !!! It a Brazilian fish stew I make with walleye and Burbot and although it’s the only Brazilian dish I make it is amazing and one of my favorite meals!!!

Yeah, Luckily, I do have a lot of Favorites and love good food of any kind !!! If it has green pepper, okra or celery in it , that is my kryptonite!!! I enjoy simple food done well, and strive to try new things and extravagant food . I also like challenges when cooking and happen to think I have a pretty good palate for replicating recipes !!! The one thing I have not delved into is baking. I’m not a big sweets / dessert guy ( love a good chocolate cake though) but I would love to learn how to bake a few good breads. Problem is my wife doesn’t do bread often and I don’t need the extra carbs cuz I’m too busy eating everything else!!! I could go on and on, but now ya got me hungry talkin about food again and have to go raid the fridge !!! I’m thinking a nice little Swiss and Brick cheese Sammie with some German beer mustard from Aldi !!!

This was my dessert yesterday smiley  we went out for a very nice gentle boozy lunch with some friends and the Yorkshire puddings that came with my roast beef was so good that I decided to ask for two more for my dessert.  The look on the face of the young lass taking our dessert order was priceless.

On Saturday we had a barbecue for a dozen people that turned into a barbecue for seven because someone double-booked and someone's son was in the final round of a basketball tournament. The menu was Texas-style brisket, pulled chicken, beans, slaw, and dessert brought by some of the guests. Needless to say, we have a lot of leftovers.



This is a jar full of the rendered fat trimmed from the brisket, which I subsequently smoked in the smoker for several hours. It will most assuredly find a home in my cardiovascular system.



BTW, I got the last prime brisket in Sam's Club. It must have been leftover from an earlier delivery because it was priced at 4.99/lb. All the other briskets were "choice"* and cost 7.59/lb!!! It was also quite a lot fattier than other briskets I've bought from Sam's, which may have been why it was the last one left.



*For non-US residents, "prime" and "choice" are grades of beef. Prime is to choice as "premiership" is to "championship" which should erase any confusion.

Traditionally leftover puds would be a]eaten with golden syrup (cane sugar syrup) after all it's effectively pancake batter- I did try a piece of mine with some ice cream from my wife's dessert ........ ice cream and gravy isn't a combination I'll be trying again soon!

I had Beef Stroganoff and a biscuit, but dessert was the real star of the meal. Cherry custard pie with whipped cream. No green peppers!

This is Mediterranean Pie. A guy at work gave me the recipe. I bought a spring form pan & made this happen.



It's layers of Black forest ham, spinach ,peppers, eggs & cheese wrapped in puff pastry. 



We tried phyllo pastry & it turned out soggy. I'll look up the recipe.

I (Liz) made a big batch of venison meatballs this afternoon, and we had some with sauce over linguine and I made Al a meatball grinder. He said it was so good he even did the dishes (crumpled up a piece of foil and tossed it in the rubbish.)

Hello……..venison…….meatball …..!!!! My favorite of all time!!! Please tell Al it’s another one of my favorites!!! LOL!!! I’m kinda like Hancock from the movie……..well, I love a good meatball !!! Meatballs and meatloaf are an art and simple is better and I never met a meatball I didn’t like!!!! Well, not the frozen ALPO type meatballs but all good homemade meatballs. They always make the meal fun!!!

Autumn dinner of ham steaks, baked sweet potatoes with walnut butter and roasted vegetable kabobs.

I'm thinking hot cider and cake doughnuts for dessert. Hot fudge brownie sundaes were in the running but dropped out due to excessive richness and the notable lack of brownies. It's Fall in West Michigan, we are completely awash in fried pastries and Apple Cider.
