Terry made a loaf of sourdough bread so we're having B.L.Ts & I'm having a go at making French onion soup.
Slammer mentioned guanciale on here & got me interested. We have a great local business that does butchering & smoking & sells some awesome stuff. hertelmeats.ca/.
They have smoked cured hog jowls that aren't too salty. I put them in vacume sealer bags with a bunch of sage,thyme & garlic & cook them for 8 hours in the sous vide. When they're done I cool them off in cold water & throw them in the freezer.
It's great to have on hand when your making beans or pasta! Dice some up to season your pan. A little goes a long way!

I juiced a couple of oranges, and added the juice to some Frank's honey garlic bbq sauce, which I used to glaze the duck. The oranges went into the cavity for some extra flavor.

Ordered Chinese takeout last night. I usually order the same thing which was the case last night. Szechuan chicken and shrimp, extra spicy and no green pepper.
I’m thinking they either have a new chef or the regular chef was having a bad day.
I love spicy heat, but I bet this chef still has tears sizzling in his wok from laughing so hard after I left.
As I said earlier, I love spice and a good amount of heat, but DAMN !!! As soon as I opened the container I could feel it in my throat from the smell. After licking the spoon I started coughing, and after my first bite it felt like someone took a ball-peen hammer to my tongue!!! WTF !!! I have never eaten anything that hot before and didn’t think I ever would again, but like a dumbass I ate the leftovers tonight. Didn’t seem quite as bad tonight, probably because my tastebuds got seared last night.
I think it’ll be oatmeal for dinner tomorrow!!!

I have been away again, on a job. The grill is rusting, the meat is getting freezer burnt. I mean to change that next week, since I finished putting in the spring herbs and tomatoes, etc. before leaving town. Those duck meals look good.

We discovered a family Cuban restaurant this evening and chowed down! Yucca fries, sweet plantains, beef empanadas, black bean soup with rice---so nice! Familiar flavors from back in my Key West days, I love Cuban food.

Love me some Cuban food!!! One of the best dishes I ever had was also something I made for the first time…………Aroz con Pollo !!! Wow , talk about flavor!!! It’s all about the sofrito, which is the Cuban mirepoix or Cuban version of the Trinity .
I’ve eaten at a few hole in the wall Cuban restaurants/mom and pop Mercados that also served lunch from the back counter in Miami, and let me tell you………Cubans know how to eat, and more importantly, know how to make amazing food with simple ingredients!!! Very underrated or not known to most people, but we’ll known in the culinary world.

Somebody please school me on the plank method of cooking fish on the grill !!!
I don’t understand what purpose the plank is for???
Is it to keep the salmon or fish moist and away from direct flame?
Is it to get a smoke infused flavor from the plank?
I just don’t get it!!! Hard to get color on the fish or salmon and seems it would be like steaming or poaching without liquid.
I can’t imagine the wood , especially if soaked, imparts any smoky flavor, and I certainly wouldn’t want cedar!!!
In all honesty, to date, I have NOT tried it and have never had anything cooked on planks. I just don’t get it???
There is a nice restaurant near me that serves everything on a wooden serving board.
No thank you please, I want my meal served on a plate that is non porous!!!

We use cedarwood planks drillhols in it..nice even cook in a smoker or grill..
The only thing that is a pain..
Is cleaning the fat out of the holes...
Soak the board in water over night.. cook on med/low heat...
Note ..cowboy coals..takes the board with it...

Some pics of a cedar plank we've used for cooking fish - top and bottom. It makes a nice even cook and imparts a good smoky flavor to the fish. You can see what happens with a really hot ??.

Dale, it's not poaching or steaming, it is roasting. Salmon gets a nice color, but it doesn't start off white either, and the color may come from the glaze anyway. But plank grilled salmon is very nice, and I've never been able to cook any kind of fish directly on the grill rack anyway. I've always used something like foil or some sort of basket-thingy (technical term).

I (Liz) cooked up some onion, garlic, and jalapenos, and added andouille sausage, black beans, a can of tomatoes, a bag of spinach, and some frozen shrimp. Served it all over saffron rice. Stuff!

Oh yeah, I also threw in a bunch of Creole seasoning and some chili garlic paste. Al ate it all and didn't even reach for the Frank's Red Hot! Tomorrow we are smoking a turkey, but the next day I will stuff peppers with the leftovers.

Went to Minnesota this Memorial weekend to visit my son and family and celebrate a 6th birthday for one of my grandsons. My son who is s the Pizzaiolo in the family made 3 different pizzas. Plain cheese, cheese and pepperoni, and sausage mushroom and onion. I am not saying this just because he is my Son, but, it was the BEST pizza I have ever eaten, and trust me when I say I’ve had pies from all corners of the earth!!!
He has a thick steal plate in his oven and sets oven to 550 and preheats for over an hour. Simply amazing !!! Surprisingly, all of us agreed ,the best was the plain Cheese pizza.
The next day he made a Greek feast for us starting with Greek bruschetta and 2 different hummus. Then he made his own gyro meat and marinated chicken to make a dish he saw on YouTube . Google Halal guys chicken and gyro platter in NYC.
Halal chicken, gyro meat, rice and fixins covered in a special sauce. NAILED IT !!!
The kid outdid himself and I told him so!!! Best eats I’ve had in a long time!!!

Drove to West Bend , Wi. yesterday for a weekend fishing trip with my son for salmon in Port Washington, WI. which is near by. My 85 yr old parents live in West Bend and paid them a visit and to do a few odd jobs around the house.
Mom got out the old fashion hand grinder and made a batch of leftover roast beef hash. Pan fried in a little lard and butter!!! Oh sweet Jesus!!! I ate myself silly with the hash , homemade applesauce, homemade bread and a pile of fresh roasted asparagus from her garden!!! Thanks Mom !!!

I have a few wood pigeons in the freezer, they’re considered an agricultural pest in the U.K. and also happen to be my all time favourite wild meat. I was cooking for just myself today so I had pigeon breasts on top of new potatoes sautéed in chorizo oil with chorizo and black pudding. The pigeon breasts are lo]ike really good steak with a hint of liver and they only need a touch of a hot pan as they are best served rare - they’re delicious.
