Classic cheese fondue, served with chunks of lightly toasted baguette and meatballs. As it is no longer the Seventies and I lack a fondue pot, I made it in an enameled Dutch oven.

I’m a meatball junky and once a year at Xmas or new year’s we have cheese fondue which is one of my favorite treats and not eaten often enough as far as I’m concerned.
I remember my parents having Fondue Parties in the early seventies!!!
I’m pretty sure it was just an excuse to drink and eat off a stick. We had meat fondue (fried tenderloin in hot oil). Cheese fondue, pizza fondue, vegetable fondue and desert fondue. Ahhhhhh, the Seventies!!! Makes me want to put on my leisure suit, silk shirt, white shoes and makes me feel like dancin!!! BTW......I still own 3 fondue pots !!!

Mine were simple ..
One flat bread wrap...
One slice ..American cheeze..
Diced onion..
One greenie meanie pepper.. chopped
Wassabi mustard..n dijon mustard...
First fry hotdog...brown it up...
Then roll all the stuff up in the wrap..
Grease the pan with buttah...
N..fry the whole wrap..till light brown to med. brown..
All 4 sides...
Mine do not make it to the plate... ;0)

We all made pizza last night, it’s the kids Friday night treat. I made a lovely one, very little cheese, ham, salami and chorizo and red onion. I then dropped it on the floor straight out of the oven topping side down, all of which stuck to the floor.
The omelette I had wasn’t nearly as good as I think that pizza would’ve been.

I worked with a guy up north who dropped a couple of wet things in the kitchen.
His idea of a cure was a .45 cal hole in the floor.

Sunday evening, kept it simple with items on hand. Again, one our favorites. We try to keep in the fridge, a pack or two of smoked pork chops. Usually Hormel, sometimes ones offered at local meat markets. My wife has a good knack at seasoning the pork chops with fresh chopped rosemary, then a quick searing to heat through. This time served with roasted cauliflower flowerettes, roast carrots, and cucumber salad. I did toss in a bag of chopped onion that I had leftover...they got crispy brown but not burnt, and were yummy. No wine pairing, just brought our much needed from the day, Gin Buck to the table. Brad

On our drive to New York today we were going through Cleveland , Ohio and had to stop at my favorite spot to split a sandwich. We stopped at IMO the best corned beef sandwich spot anywhere!!!
Slyman’s Deli in Cleveland Ohio!!!
We split a 1/2 corned beef & 1/2 pastrami sandwich . OMG melt in your mouth goodness on toasted bread and melted Swiss cheese. If your ever in Cleveland this is a must stop!!!

Local pub, the Grizzly, is cranking out spag dinners as a fund-raiser for the figure skating club.
They have costs like rink rental and so on.
Somebody is buying al the children's dinners.
I decided I'd do 10 adult dinners, the pub staff can decide who gets a free one.
I'm on the take-out list, both Sat and Sun, for myself.
I'd rather have a beer and a pizza but pasta sits very well in my old guts, I might as well have comfortable nights.

It was!!! Looks like sooo much meat , but it has just the right amount of fat and literally melted in my mouth!!! Look up Slyman’s deli on the web and take a look at the rest of their stuff. That was without a doubt the best $16.00 sammich I ever had!!

A friend came over while we were gardening to give us a hand. We grilled up some smoked brats & had Terry's blue ribbon potato salad for a late lunch.
It's Bubba's 12 Herb & spices chicken wings & spinach salad later. The 12th spice is 2 tablespoons of the buffalo wing dust Fig & Liz sent us!
We always have Eggs Benny on a potato latke on long weekends. We use packaged Knorr Bearnaise but I've got a French tarragon plant to jazz it up. Swiss cheese , crispy bacon, 2 poached eggs & the sauce on top with bacon on the side. Maybe coffee with Irish cream & Yellowtail Bubbles & O.J.

Jonty, I had to look up toad in a hole as the only toad in a hole I know of is the egg in toast version of which I’m not a fan. Yours on the other hand looks amazing and am betting it pairs well with a good cold one or 7 !!! I get a little nervous any time I see or hear Yorkshire puddings.........well, you know!!! LOL. Yours Looks damn delicious!!!

as long as you use THE OVEN you'd be fine. It's a great sunday lunch meal - worthy of a couple of beers and a dad nap on the sofa afterwards..... you should give it a go!

Most of the time, most of the people are afraid of the Maillard Reactions.
Read about this. Let your food go another 10 minutes or whatever.
Serious browning is what's needed.
I'm quite content with the way that I fry taco burger and the herbs and spices that I use.
Decades ago, I realized that the meat was half-cooked. A color change and I figured it was done.
Not any more. Big serious crispy sizzle, no it isn't burning. Maillard.
The recovery in a taste sense was what I needed.

Since I have not been able to post pics for some time now, I will just ramble. Sunday, I dug deep in the freezer and found a pork tenderloin. Great. thawed quickly. I waited for a thick smoke of apple wood to develop then baked it in closed grill at 400*F until internal temp reached 135-ish*F (only about 20 min.-ish), as it rested with a spritz of orange juice, I cooked the asparagus: oiled S&P, then after cook spritzed it with fresh lemon juice. What I did a bit different was the heavy coating, applied after a rubdown with oil:
2 t Italian seasoning
1 t garlic powder
1 t cumin
1 t salt
1 t chili powder (optional)
1/2 t smoked paprika (more if chili powder eliminated)
1/4 or so ground black pepper
[since the little pork tenderloin cooks so quickly this really becomes a baked on coating, and does not penetrate the meat so much]

We had gluten-free daughter and still-in-college daughter home a few weeks ago. They both swear by chickpea pasta, which has the advantages of more protein, more fiber, and, for those who can’t tolerate it, being gluten-free. They left behind several boxes of the stuff. It also has the additional advantage of coming in a box half the size (albeit at the same price), which is convenient when it’s just the two of us.
So I tried it in my standard salmon pasta. Just don’t. Even cooked past the recommended cook time, it never got to al dente. I assume there’s a point of phase change where it goes straight from grainy to mushy, but I didn’t want to risk it. It doesn’t have a good mouthfeel, and it doesn’t hold sauce. Unless you have to eat it for dietary reasons, leave it on the shelf.

Straight Canadian durum wheat (Group II) makes the best pasta on the planet.
My guts love durum pasta in all possible shapes and sizes.
Durum and water, 15,000psi and we have the makings of supper.
I make an egg/durum pasta dough. Hand-cranker. I can make maybe 40 shapes from that.
Stained glass with poultry seasoning rolled into the middle is a best seller with birds.

Something that I have not done in a year or two.
Just me and the cat.
So to have leftovers that I like, I have ordered a Chinese (take out) dinner for three people.
It seemed to have a bunch of things that I like, even better than the dinner for 4 people.
Beef chop suey for example. I can pass on that.
So, I will take my insulated bag at 5:30 and tootle over for the pick-up.
