Yeah...
I wanna try n compare that Canadian rub...
Real ribeyes this weekend...! :0)

STUD - Posted - 10/11/2020:  15:37:44

Double bone-in ribeye with Schwartz's Canadian seasoning- definitely way less salty than the McCormick's Montreal seasoning we're used to. Good stuff! Hassleback potatoes on the side:

The stew and dumplings or the fight over  pan drippings with Slammer?  I've seen the size of Dale and I don't fancy my chances...... I was hoping that maybe I could 'distract' him with beer.

Reheated baked potato with loads of trimmings. Farm egg salad. Olives and pickles.

Brian T - Posted - 10/12/2020:  21:55:40

4 hard boiled farm eggs, peeled and rinsed.
Dice well with the pastry cutter.
2 tbsp Miracle Whip (or whatever you prefer) Ranch Dressing is OK.
1/2 tsp each seasoned salt, pepper, tabasco green, dry mustard, garlic powder.
Handful of very fine dice onion and green onion for garnish.
Fold all together. Heap on the plate.
Baked potato. Local foods.
Tomorrow is elk pizza.

Asian-inspired spicy chicken soup with ramen noodles, greens, and coconut milk:

I hate coconut. I got sucked in at an early age by some kind of square with the dried stuff on it on a desert table. As soon as I put in my mouth I knew it was a mistake.

I used some of my allowance money to buy a coconut after that. My Dad worked in the produce department & asked what I was going to do with it. I said I was going to drill a hole in one of the eyes & drink the milk & then cut the top off & make a drinking cup out of it.

He wasn't letting me use the tools so when he tried to drill the hole it cracked in half & there wasn't any milk. I tried some of the meat out of it & it tasted just like I remembered! I don't think they send their best coconuts to Canada.

Terry has been sneaking canned coconut milk into sauces so it turns out they're good for something!

Brian T - Posted - 10/16/2020:  17:53:55

One of the three eyes in a coconut is the active embryo and quite soft.
Shake and listen for juice. Overripe go dry. You open a coconut eye with your house key.

I can't eat coconut meat any more. Gives me the running green screamers.
OK in curries or with Garam Masala to "smooth" out the taste. Cooked is OK.

The shredded crap used in baking is an Esso byproduct that was cleaned off the seabirds
who were contaminated in the Exxon Valdez oil spill.

Across the street from my daughters house near Puerto Vallarta is a cocoanut stand. They cut the ice cold cocoanut top off with a machete, put a straw in it and charge you two bucks. I get them often. My grandkids like them too. They will give the kids a plastic bag of fresh cocoanut meat if they ask. Its a bit slimey and chewy for me.

You should see the limes we're getting, all yellow & scabby. I think people are still hoarding stuff.

We're having sous vide Black Angus steak tonight. Fresh rosemary, thyme, garlic & olive oil in the bag.

I'll try to post a pic.

edited to add:  Cavendish frozen P.E.I. potatos & spinich salad.

If those limes still have good juice (taste one), slice 2 dozen big ones at 1/16".
Make a batch of lime marmalade. Beats orange every day even for roast chicken glaze.
You can jack up the color with yellow and blue food coloring.
= = =
Next up are big potato skins with taco meat instead of pepperoni.

Spanakopita: spinach, feta, onions, and garlic baked in phyllo pastry. Flatbread with bruschetta toppings of goat cheese and tomatoes. Oh, and some Greek olive paste.

I spent a couple of weeks sailing around the Seychelles some years ago, we'd collect fresh coconuts as they fell from the tree and then I'd spend hours trying to get into the blasted things with the rudimentary tools we had on the boat - if I recall Bob, genre was always a faint taste of blood associated with that fresh as a daisy coconut milk smiley

i missed out the other night, I asked for a new splitting maul for my birthday and my wife mistakenly bought me a splitting axe.  When she was doing the online exchange in her remorse she spotted a really discounted sous vide probe thingy so she ordered it - sadly the next morning she got a mail that it was over over ordered and out of stock. We'll keep looking.

These went in the sous vide Friday.

Herbs, garlic. salt & pepper & some olive oil *54 C. for 3 hours.

We dry them off & throw the herbs & garlic in a cracking hot cast iron pan with some bacon grease & peanut oil.

It's going to smoke so open a window & fire up a fan to make the neighbours jealous!

Roll them around in there until they're all browned up & plate them up with butter & heart healthy Danish blue cheese. Heh Heh.

I was just reading this thread, drooling on my keyboard, and I get a text from one of our traveling companions from last year in Australia that she had to do CPR on her husband on some deserted pier in Maine, followed by a heart bypass and subsequent PT. I'm taking this as an omen. I may have to do something about those extra covid pounds. Maybe tomorrow.

bubbalouie - Posted - 10/19/2020:  17:11:43

Sorry to hear this this Brian. Not to make light of this but having had 5 by passes, dunking your lobster roll in clarified butter can clog you up for sure. It's a constant battle for me too!

Remsleep - Posted - 10/19/2020:  17:32:14

Crisp autumn nights mean soup around our place. I made curried kabocha squash soup with croutons from the heel of the previous weeks sourdough loaf. Good eats.

bubbalouie - Posted - 10/21/2020:  18:30:03

I've tried this recipe twice. The first time all the eggs weren't cooked so I had to put back in for a bit but it was great!. I couldn't find puff pastry the first time so I used philo.  It turned out so good we used it again the next time!

We jacked them up with some hot peppers but went with the recipe. I bought a spring form pan & Terry helped!

Thaw out the bags of frozen spinach. Cut of the corner of a bag & squeeze out the liquids.

I wish I would of paid more attention when Mooooo & everyone were making sourdough bread. Terry got a starter from a guy she works with & it's been an emotional roller coaster ever since.

She has been baking different kinds of bread all her life but sourdough wasn't one of them.

I got to eat the doorstops sliced thin, toasted . Now she's got it figured out & I haven't seen a slice in weeks!

Everyone where she works with says it's great! How would I know?!

Couple of questions Bob:

1) Where does Terry work?

2) Are there any jobs going?

That looks amazing!

How did she create that shape with sourdough? A mold, or dark sorcery?

Fried chicken thighs, asparagus, and (maybe) Al's birthday blueberry pie - his bday is actually tomorrow:

bubbalouie - Posted - 10/22/2020:  15:52:27

@Remsleep She lays down string in a star pattern & sets the dough on it & ties it up before it rises. Then she slashes it with a razor blade to get the other slashy part & bakes it.
