Last night: canned baked beans augmented with leftover smoked beef, onions, and peppers. Spinach and cornbread on the side. This was a good use of the beef, a cheap and very tough cut.

Where’s the Ketchup??? Where’s the cold one??? I’m a hash aficionado!!! Just made me some in the old grinder this weekend with leftover roast beef. Extra onions and fried crispy edges smothered in ketchup and a little hot sauce with a couple sunny side up eggs!!! Icy cold Pabst Blue Ribbon to wash it all down and that’s what I call Sunday Brunch!!!

Yesterday was grocery shopping day, such as it turned out.
Not one single green pepper, no oranges or even marmalade and other stuff missing.
Poor store people can order what they like. What they get on the truck is another thing altogether.

But, this morning was coffee, strawberries and bagels with C Cheese.

Housekeeper today.

Pub reopens tonight. Reserved my favorite perch for 6PM.
Special is a roasted chicken thing with penne Alfredo. Just what my guts enjoy.

Pub reopened last night. The "Tuscan Chicken" special looked really good.
Sat in my reserved space and all I could think of was fishy stuff.

Fish & chips, order of Calamari, 2X coleslaw, tzatziki, tartar sauces
and 4 jumbo popcorn prawns on the house! Pint of Porter and all was well.
Everything was cooked as I like it.

I took Salish Smoked salt, Spanish Matiz smoked salt and plain Maldon sea salt to play with.
Mortar and pestle and plate.

Freezer surprise at home again tonight. Might be my best burgers.

The menu for the weekend plays out as such !!!

Tonight , hot sweet Italian sausage (made by my son) on a crusty roll with grilled onions and sweet peppers , provolone cheese and a drizzle of red sauce. Cole slaw, Aldi’s Nashville Hot Chicken kettle chips and French onion dip.

Tomorrow’s Father’s Day starts with Bloody Mary’s, eggs over easy and Slammer Jr.s breakfast sausage links , hash browns and toast. Lunch……….another Bloody Mary!!!

Dinner is aged New York Strips marbled nicely, linguine with clam sauce and a wedge salad with creamy blue cheese and extra crumbles.

Monday is Mrs. Slammers birthday and will entail breakfast or lunch of her choice and Shrimp and andouille sausage in a Tasso ham creamy gravy over cheesy grits. I can’t buy hominy or white corn grits anywhere near here so it will be yellow grits (aka) polenta !!! Mrs. Slammer made her Birthday cake today which will be dessert each night. She can bake a mean cake!!! She won’t let me bake……..I love cooking, but hate baking!!!

Tuesday………….enrolled in fat class and a reservation with Betty Ford. Hopefully a room with a view and my own bathroom !!!

Dessert tonight: storebought (Junior's) cheesecake with fresh strawberry sauce and whipped cream. The sauce is basically strawberry gravy - berries cut up and cooked with sugar and cornstarch until they thicken. A little lime juice, pinch of salt, and a shake of cayenne, just because.

I did father's day cooking on Sunday. A rack of ribs, dry...and roasted a 4# chicken in the grill-schmeared inside, outside, and under the skin with a butter, lemon zest, fn chopped rosemary mixture. Started it at 450*F for 15 min then reduced to 350*F.
While chicken rested I grilled cauliflower steaks again, wiped with a olive oil, lemon juice, and minced garlic mixture, then dusted with smoked paprika.
Paired (washed down) with a French Chablis.

I bake plates of chicken thighs like that. Stuffed each one with a cigar of crumb dressing.
Pack more around the thighs to soak up rendered cooking juices. 45 minutes.

Use chip-dip herb mix in your next batch of burgers. Mix and refrige overnight.

I have been back in the field for a while now. Not worth describing what and how I eat out here in the job shack. It can be downright disgusting, even.

So, on the occasion of my birthday today, I am dreaming of .....
English cucumber salad
grilled cauliflower steaks
a thick bone in ribeye seared on the barby
a pint of "keto" mint chip ice cream

Enjoyed in a park full of trees and grass, with an old time band playing nearby. Wake up fool! ;-)

Unfortunately, that dinner was only but a dream, If I were home.  And, unless the rig breaks down for repairs, I can not go into town to eat.   



And, since the only way I can provide a pic nowadays seems to be to have to first load pic on to my home page and then create a reply and upload from my home page.  I am too lazy for the extra step presently.   Brad

I was spoiled rotten yesterday. Father’s Day happened to fail on my daughters birthday this year so we postponed FD by a week so as not to spoil her thunder. Woken up with coffee in bed, followed shortly by a sausage and egg banjo in fried bread - a new one on me and insanely good. The kids then spent all afternoon making me a steak and ale pie and bread & butter pudding - one very proud and lucky dad here!

Your pic with the Hobby Horse sure invoked an old dad and daughters memory for me.  My folks shelled at the bucks back in the early 1980s for that same horse (though ours has red rockers).  I can't tell you have many photos we have of the kids on that horse. several for every Christmas for a decade or more.  My mother always hosted a high tea at Christmas time for the children of the church under age 10.  They all wanted their pic taken on the English hobby horse.  We still have the hobby horse!  Treasure it, for sure.  Brad

It's the bain of my life Brad!!!  The in-laws bought it for my daughter.  There house was way way bigger than ours and they seemed to forget this when considering gifts - this includes the huge model of a sailing ship they bought my son.  I'm constantly moving it around as its always in the way.



My in-laws have just moved into a much smaller house for their retirement, I am just about to return the favour by getting them some impractically large gifts smiley

Pot roast served over mashed potatoes. I browned up the meat in the kitchen, added broth and onions/garlic, and then moved the whole thing outside to cook over indirect heat on the gas grill. Kept the heat outside that way, as we're in a heat wave here, though nothing like the PNW.

Fig & Liz, I hear ya about keeping the heat outside as it’s about 200% humidity hear right now. The temp isn’t that bad, but it is damp and wet!!! I don’t own one yet, but the infamous Instapot should be good for keeping the heat down in da house. I’ve only used one at deer camp and the results for meals like you just made were fantastic!!!
Had red beans and rice tonight with andouille sausage and was sweating bullets eating it!!!

Dale, I don't have an insta pot but we regularly take a slow cooker on our hunting trips.  Throw the ingredients in before the afternoon/evening outing and then when you get back, evening meal al sorted.  Works so especially well in the summer when sunset is late and if you've grassed a beast that makes you even later getting home..  in the winter when the outings are shorter due to the short days, we throw canned meat and vegetables in as they didn't need a long slow cook - great piece of kit, every hunter should have one!

We always struggled to find cheap and cheerful accommodation in the area where we hunt.  We had one B&B that didn't like guns so that was cut short, the next B&B was fine with guns (in fact we culled deer from their garden) but the breakfasts were legendary - for all the wrong reasons.  We then found a marina that had some cheap family rooms, a bit like a motel - that was great until they cashed in and hiked up the prices - in fact the sink in the rooms there wasn't big enough for the crock pot so every night, one lucky chap got to go for his shower with dish soap and crock pot in tow smiley.  We've now found a holiday place with lodges, they keep a couple of run down lodges for forestry and wind farm workers, we get one of those at a cheap rate - they've even let us put a meat larder (nothing grand 4ft x 10ft footprint) up there.

I will tour you around a half dozen of the most amazing wilderness campsites that you can imagine. They have been used by big (20) hunting groups for decades, Absolutely spotless. No evidence whatsoever that anyone was ever there. The stone fireplaces get bigger and bigger.



As a local, I never need overnight trips where I live. We come home, pour drinks, feed the dogs and cats and then attend to the days' game. It's dark, it's very quiet. Maybe starting to snow. There really is peace on earth some times.

Most times, I'm cleaning birds in the kitchen sink and the discussion is how to cook a few of them for supper.
After that, I "play guns" and dry, clean and lube everything while supper is cooking.

It's different now. No dogs. One deaf cat. A partner I have not seen in 8 months.
I still cook for 8 and freeze what isn't eaten in meal sizes. That's ready chaff after a day out just to reheat.

This post is for other folks ignorant of New England "ways", those midwesterners like me.  My kids are presently vacationing in Maine.  One of their goals is to eat a lobster roll every day at different joints and towns.  I finally had an ah-haw moment following their pics they keep sending. BTW, they are eating other great stuff as well!



The mysteries of lobster rolls solved...



1.  What the heck a "top split" or "split top" or "New England" style hot dog roll is, compared to our Midwest hot dog roll.   Well, a split top bun is what it says, you cut down through the top of the baked roll and pull or cut them apart.  A Midwest style hot dog bun is separated and cut through the side of the roll.



2.  A Maine lobster roll is served chilled.  A Connecticut lobster roll is served hot/warm.  So confusing. ;-)



 Heck many times growing up, my hot dog wiener was just put between a folded piece of white bread.
