Glad I ate before Halftime of the Super Bowl!!! Worst 1/2 time show I’ve ever seen and lost my appetite.
Made Andrew Zimmern’s Grandmas sweet spicy sticky wings and a big bowl of shrimp Pho. Cold day here today and a big hot bowl of Pho is just what I needed.
Both were better than the game or the halftime show!!!

I was drooling over someone’s pic of baked gnocchi the other day, something I’d never had - so I thought I’d give it a go. We went for an Al Forno dinner, gnocchi, veggie lasagna and mushrooms. I cocked up the gnocchi slightly, shyer spending 3 hours simmering the sauce, I then let it dry out too much in the oven. It was still good though, just not as runny and unctuous as I would have liked.

We took advantage of the unseasonably warm weather tonight to grill a beef rib, accompanied by baked potatoes (sweet for me, regular for Al) and a salad. Excellent! Plus some n/a microbrew stout and IPA.

Terry came home with some really nice sole fillets! She dipped them in egg wash & her recipe called for those dried onion rings crushed. We were out so she used those dried jalapeno chips I posted before on here & Panko crumbs. She added fresh chopped dill weed & S & P. 



Long grain white rice. Steamed carrots & good tartar sauce! Nailed it!

Back tracking a bit here.  I got home from a job on the 15th.  So Marilyn prepared a "Valentine's Day plus one" dinner that night. A shrimp pasta and a bright salad.  I fixed French 75s with a strawberry.  For an appetizer. I stopped at Marilyn's favorite German meat shop, near where she grew up on my drive home.  So we ate seasoned raw hamburger with saltines.  Would have had zitter as well but they had a rush on the zitter. Scallops in a citrus sauce. Dice-fried potatoes which I have not made in ages (laziness).
Bigglug of dry vermouth on ice with navel orange zest. Maybe eat some lime.

When I was a kid, scallops was my birthday treat dinner thing.
Since I'm so much closer to the end of the stick, I never wait for an annual dose!

The settlers of Ellis County, Kansas were largely Vulga and Bokovina Germans in the later 1800s.  Along with their ancestral traditions they incorporated Russian and Austrian culture.  These were poor farmers, butchers, stone workers, and other labor trades.



the raw hamburger is mostly a simple spicing of garlic powder, onion powder, some fine chopped green bell peppers (lately chopped jalapeño) is making its way into it. Preferred on Saltine crackers. 

 



the zitter, is basically a way to use up more of hog butchering, by taking all the scraps and goo and boil it down then chill it in small bricks.  Enough stuff in their to set into a firm cake.  It's fine textured, but content wise similar to head cheese. Again snack on it by putting thin slices of it on Saltines. 

 



my wife being German (though an outsider of the Saar Region) loves the foods of Ellis County.  I travel through it on most of my Jobs 200-400 miles away from Wichita. If I pass through Ellis County during the day, I better stop at the meat market in Hays.  I buy zitter, raw hamburger, and ropes of pork liver cased sausage.

Last night, leftovers. Took the chili and hacked it into Cincinnati Chile.  Even thou it had beans in it. We made a pot of spaghetti,  spiced up the chili with many of the common spices of "Cincinnati Chili" , then not having oyster crackers, we used, yep, Saltines. Worked out very well.  Then smothered with Colby cheeses.  Brad

My tastes have been changing. I really NEED that carbon dioxide fizz in a soft drink or a beer.
Eating slices of lime/lemon/orange isn't tangy enough. Must look at the economics of one of those Soda Stream machines.

More pasta & cheese sauce again tonight. My guts are really happy to sleep through the nights.
Might garnish that with a tuna fish curry. Looks so disgusting, have not found anyone asking for a share.

Local pub does a really big burger with a layer of very thin sliced fresh Jalapeno.
For those times just when you feel you need something a little zippy for supper.
Just bought some to slice and freeze for on my own burgers.

I will have admit, we really enjoy our soda stream. We got it as a gift several years ago.  Do I don't have to figure capital investment, payout into my economics.  And so far, been to lazy or forgetful to trade in my old gas bottle when buying a new one- to get the credit.  We have not used it to mix in flavorings, but for gassed water and cocktails we use it a lot. Spent some time this afternoon, messing with the numbers. I used the Soda Stream numbers in our hardware store website and the box of Pepsi cans on my kitchen floor with my grocery receipt from Thursday for price..

I can buy SS Pepsi and 7Up syrup.
Blunt cost?
The store can unit volumes of drink (355 ml) are 2 cents cheaper that the SS equivalent.
The real tipper is that the store cans have a 10 cent deposit.
So that's $0.42/can-unit in the grocery store and the SS is $0.52/can unit, fizz and all.

I'm disappointed that the SS isn't some 10% cheaper to operate.

This world will be a hell of a place if we ever run out of dark rum, fresh limes and orange juice.

We drink a lot of gassed water and make a lot of cocktails using SS water, and now our water. Purifier, we look forward even more to our SS gassed water. I would need the to run the numbers for the difference with quality small bottles KC Schweppes or Canada Dry to know the economics of SS vs store bought to fit our usage.  The big bottles from store go flat too soon, after opening. 

we have the smaller and the larger SS containers to fit the needs of the moment.

I use these 5 gallon 'cornelius' kegs for storing and dispensing my home brew. They are initially intended for soft drinks dispensing. I fill them with water and force carbonate it with my pub CO2 bottle - i got really fed up with having to constantly replace the soda stream bottles.

I have never known anybody who makes General Tso Chicken.  I do hit it hard at a small Asian restaurant. I feel safe eating their small lunch buffet.  They don't load big pans with gallons of food. They keep the small pans filled as needed fresh from the kitchen.   They do General tso chicken of Thursdays.  Yummy!  Brad

Making Taco Pizza with a corn tortilla crust.



The trick is, all the cold ingredients go on after it comes out of the oven.



Season the pizza sauce with some taco sauce seasonings. Mix in cheddar with the mozzarella. Use taco seasoning on the hamburger. 



When it comes out, shredded lettuce, diced tomatoes, more cheddar, diced onions, maybe some guacamole.



Al inspired me to try some Heineken 0.0 with this traditional, uh, umm, Mexi-talian dish. To your health, Al!

I ran uptown at 7am. for a big russet potato for Terry's Eggs Benny on a potato pancake. She makes it. I shop & we have our assembly jobs when it's all ready to go. We use Knorr bearnaise sauce instead of hollandaise.



Pancake, Swiss cheese, sauce , 3 strips crispy bacon, 2 poached eggs, sauce, fine sniped chives or green onion tops & fresh ground pepper. I like a side of bacon. You can pick your own sides. We have it with Prosecco & orange juice every long weekend!



BUT when I was at the grocery store they had fresh pork hocks for sale. I bought one 3.5 lbs, skin on for about 9 bucks. Terry found a recipe with lots of garlic, fresh oregano, lemon juice & spices. I set her up with different Olfa blades & knives she uses for cooking. She scored the skin & rubbed all of the above into it. It's was marinating since this morning. Now it's roasting at *475 to crackle up the skin then down to 350 until it falls apart. 



We're Gonna Starve!

Chop skinless boneless chicken thighs.
Dredge in egg wash, then AP flour + corn starch then deep fry golden at 350F no hotter to cook through.
Make up the ultra special sauce goop, pour over with sesame seed and green onion garnish.
Like so many other chicken DF recipes.

The trick, if there is any, is to have half a dozen sauce recipes.
I prefer one with a curry base, one is citrus, another is Hoisin and another really western poultry seasoning stuffing mix.

Baked crab Rangoon is less fuss.

Bob, I have made/attempted schweinhaxe a number of times, using several methods. I still have not perfected it to where I get that edible bubbly crispy pork-rindish type skin. Post a pic, let us know how you did. Brad

I prefer the good ol hoisin sauce type.  Unfortunately, curry does not agree with stomach or the house.  Thanks for sharing.

Halloumi is a cheese from the eastern Mediterranean. It has a texture similar to a very rubbery mozzarella, but is much saltier. It can be grilled as an appetizer or used in dishes. I use it frequently in stuffed peppers with great results. I can find it at my local supermarket.

Rem hit the nail on the head Brad .  However, It's obviously made with some kind of sorcery as its the only cheese I know that you can grill without it melting through the grate and onto the coals.



The dish was really easy.  Bell peppers, courgettes, cherry tomatoes, red onions and asparagus.  Sprinkled with balsamic, Henderson's relish (similar to Worcestshire sauce but easier for you guys to pronounce) oregano and garlic powder.  Bakes in the oven for 40 mins and then add the cooked quinoa and haloumi toss and then anothe 10 mins in the oven.

My personal chicken favorite:

1C Salsa, I use mild
1/2C Dijon mustard, cooking blows off the heat
1 tbsp lime juice (don't get generous or you have a sour dinner.)
Stir up the goop, marinate the chicken for an hour.

Brown Basmati rice is a good base.

Marinate then grill or pan fry with a pair of spatter screens.
I cook nothing that ever spatters nearly as much as this does.

Chinese BBQ Pork from the Food Wishes recipe upthread. It's not as sickly sweet as the restaurant variety, and has a little more kick of heat. Some steamed spinach on the side.

We have a soda stream because we were tired of dealing with the cans. Plus a lot of the canned stuff has a lot of sodium in it. We use it for cocktails too. We keep some coke & ginger ale flavours on hand for people that want it.



Another gadget I recommend is a Sous Vide machine. I had the best steak ever on the weekend! I bought some nice small but thick rib eyes. Terry put them in the bag with some fresh rosemary & thyme & 2 smashed gloves of garlic & a dash of olive oil.



Brad: I see you've been cooking some pork tender loins. This is the best way to cook them! Perfect every time.



Pull them out of the bag , dry them off & roll them around in a cracking hot cast iron pan to put a nice crust on them. Cooked to perfection inside.



For the naysayers. Don't give me the Boiled Meat guff! The meat never touches the water! 



They say you can use your vacuum sealer but we just use a food safe freezer bag & a clothespin to hold it in a Rubbermaid plastic container. We didn't have a pot deep enough for the unit & it works fine.

Tonight was a hunk of smoked pork from the freezer my son gave us who knows when??? It was vacuum sealed and not too smoky. Sliced it thin and dipped it in some homemade bone broth to reheat it . Piled high on a nice bakery hard roll and topped with sautéed onion and mushrooms capped with a pile of (Gloriosos of Milwaukee) Italian muffuletta Hot Giardineira. Coleslaw on da side.

Holy wah………dat was one amazing sammich. Thought about putting some aged sharp white cheddar on it, but glad I didn’t……..would have been too rich. Perfect as it was!!!

I would have paid $15.95 for that sammich and slaw at a restaurant and NOT b****ed about da price !!!

Slammer!!!
