If that’s cream cheese frosting , ya just put me over the top jealous!!! My favorite!!!
But.........ya had me at Venison Kabobs!!! They look fantastic!!!
I am a sucker for good meatballs and although I don’t have pics ( I know...pics or it didn’t happen). I made Venison meatballs the other day using my usual recipe of 1/2 pork and 1/2 beef or venison. My compliments to one of the deer I harvested this last fall, as they were THE BEST meatballs I’ve ever had. Sorry to say I made a pig of myself and ruined the rest of my night as I was actually in pain from eating too much!!!
Glad that won’t ever happen again!!! Wink, Wink!!!
Slammer!!!

My cupboards are full of food. So is my fridge and freezer.
Several local eateries are struggling to stay alive on Take-Outs only.
The Pub has pulled the plug for the foreseeable future.

Western, Korean and Asian Chinese. I wish there was 3-sided coin.
Let you know which one tomorrow.

Something to celebrate last night. Finally our first al fresco dinner outside, on the patio.  Ribeye, roast broccoli, and cucumber salad.  Well deserved after a day hunting down our herbs and tomato plants.  Today we plant!

Rotini. Crab and cream cheese melted sauce in it. Handfuls of peas and dried roma tomato.
I will be sitting right here tomorrow morning with a fork, snarfing down the left overs.

My boy making one of his ‘legendary’ dogs. Mozzarella, chorizo, onions and chilli in a half baguette - the blow torch is mandatory just to get the right ‘doneness’. After seeing a picture, his 9 year old cousin is counting down the days until he can come over and make one toosmiley

When I was a kid my Dad had a buddy that used to own a restaurant. He had this 3 0r 4 foot long papier mache hot dog at his house. It was a pretty solid advertising prop.  I liked it so much the guy gave it to me! I was 5 or 6.

I kept it until my early teens & didn't think it was cool anymore. I wish I still had it!

The rotini with crab & cream cheese , peas and dried Roma was heavenly.
9AM, I demolished the cold leftovers that tasted just as good.

Jonty: tell your son that I'd buy what he makes. What's his choice of 'dogs?'

They're nothing special Brian, just what were available at the local supermarket - they're boxkwurst (probably in the loosest sense of the word).

This mornings breakfast 3 slices of French toast, eggs supplied by my electrician and maple syrup supplied by my plumber. 2 slices of Boar's Head thick cut small batch bacon. I love rural living.

Cavandish potato wedges & deli cole slaw. baked in the oven!

That carrot burger looks pretty tasty!

The carrot burger reminds me of crab cakes, an essential missing from my diet unless I make it to the city. Hard to find good reasons to go.
Pacific Halibut sure is the #1 choice. Some fish I'll spice up but halibut for me is butter and salt.
I might have a fix = call the fish shop and order. Get a local freight service to do same day pick-up and delivery to me out here in the boonies.

baked or fried Bob? I think from some of your comments that you've got the 'healthier option' cooking off to a tee and was wondering if you did your fish that way too.

RonR - Posted - 05/01/2021:  17:54:18

We had a dish of crab claws, with sides of roasted tomatoes and roasted garlic.

2 day old lasagna with a fresh salad including a whole avocado and another piece of birthday carrot cake for dessert.

Wet Spaniel Yes! Terry dips it in egg wash & rolls it in Panko crumbs & bakes it. It comes out nice & crunchy.
She makes a really nice lemon dill sauce to go with it.
It must be a seafood weekend because we had linguine parmesan with lots of prawns last night!

I think it's time to cook up a 2-3 lb batch of taco meat. My seasoning mix since 1976.
I've got all the trimmings even soft corn tortillas (another foodie addiction).
The rest I'll divvie up into meal size and freeze.

Wet Spaniel - Posted - 05/03/2021:  16:05:33

I brined a chicken in molasses and beer before smoking it. I also did some roasted tomatoes and garlic (thanks for the idea RonR ) and roasted peppers in balsamic.

We’re (Mrs. Slammer & I ) are on a much needed vacation . We had a wedding to attend in Knoxville, Tn. then decided to make it an extended trip and have a Condo on the beach in Kure Beach , North Carolina. Relaxing, walking the beach and hitting up all the fresh seafood markets we can and cooking up some fresh goodness!!!
Last night was fresh Red Snapper filets pan seared with lemon butter sauce, crab cakes, roasted garlic parsley potatoes, strawberry salad and multiple libations throughout the day!!! Tonight is my night off at a seafood spot in Wilmington.
We have a beautiful kitchen in our condo and access to great ingredients and having fun with that!!! Lots of stuff not available in my backyard!!!

Never had a Cornish hen - they look great!

Brian T - Posted - 05/04/2021:  19:32:14

Jonty: I don't know what breed of chicken they come from. Cornish Game Hens, with all the dinner trimmings, make a meal for 2 with no left overs. So what the hell? BBQ 2 or 3 with a good dry rub and a quartered onion shoved up their whazoo. When I have eaten all the grouse from the season,
I like the CGH any day of the week.

The real "BBQ" involves a coating of herb and spice mix ( your choice, lots of recipes).
Then 3 hours at 275F with apple wood smoke for the first hour over a water tray,
maybe foil for the last hour to cook in its own juice. How dry do you want?

We used to take the kids to Kure Beach every summer. If you can get out to Southport (take the ferry, not the road), there's a really good Thai restaurant (or was circa 2011). Fish is always good down east. Wilmington has become a real foodie town. Dining on the river walk was always our grown-up treat.

Tonight was what I call Seafood Mayhem!!!
A cross between Ciappino and Pasta Arrabbiata. I was hungry for both and combined recipes and ended up with a feast fit for a 1/2 drunk 60 year old and his smokin hot 58 year old wife!!!
The fresh seafood week continues and I’m lovin the hell out of it!!! Mussels, fresh shrimp, calamari and a few scallops!!!

The very last 6 of the local organic grower's potatoes are in the oven.
A few pieces of battered mystery fish and a few little Thai spring rolls in the oven, too.
It's fish. What can I say? I eat fish. Pile it on.

I think I can order a bunch of fishy things in the city and get a local freight hauler to bring it out here for $15.00. Round trip in my SR-71 (burns a lot of gas) would be $150.00.

Haven’t had any meat in over a week and has only been seafood or fish!!!

Vacation is over and got in late last night after all day in Knoxville, Atlanta, Minneapolis and Iron Mountain airports and too tired to cook. Being in the south for the last 2 weeks we saw numerous fried chicken shops and guess we were brainwashed or saw to many subliminal fried chicken messages as we ended up bringing home KFC. Have not had KFC in over 20 years!!! Hit the spot, filled the void , and tasted just like I remembered!!

Preheat your oven to 300F. Buy KFC and on a rack over a sheet pan, slide that chook into the oven to 30 minutes to really finish cooking. THAT tastes good.
