I always went for the clams because you get more than ordering fish. That was back east.

Every time I find a place out here with good fish & chips the next time I go back it's gone downhill.

I've been served sour cold slop that was on the way out too. a whole lotta fish & way too much batter.

My favorite job EVER was when I worked at a fish store. Clams, oysters, filleting salmon & halibut 3 kinds of smoked salmon, cleaning dungeness crabs, salmon candy & roll mops.

I was gettin' my Omega threes those days boys!

Not many food places here in the village and I am a BIG tipper for food I like.
Each place has just one or two things that I really enjoy for supper.
Two places are magnificent for lunch.

Friday will be Calamari in a citrus sauce (appetizer size) and yam fries in a Korean place.
Half way through the calamari, I will order a second serving so it all comes hot with their citrus sauce. I'll take some salts and a mortar & pestle for entertainment. They have their own blends so it's quite a discussion.

Breakfast burritos - this was a first for me. I saw a video of putting the tortilla on top of part cooked eggs in the pan, then it welds together and you can flip it like a pancake. We had buckboard bacon, back bacon and cheddar for the boy - no cheese on mine. They were fun to make with the kids.

I also either b=need to buy a bigger frying pan, or buy smaller tortillas smiley

Store had a great sale going on ribeyes and salmon. We bought both. Last night a salmon dinner.

Center cut salmon, baked with a mustardy cream sauce with dill and capers. Boiled small yukon's in a butter parsley sauce. A crusty role.

And something new: a salad of...

Minced shallot soaked a while in red wine vinegar, then add chopped capers, chopped toasted almonds, curley parsley, a splash of olive oil, tossed and seasoned. Paired with an Alsacien Reisling.

Brad, I recall your love of Riesling's and I was planning to taunt  you with pictures of me quaffing some on the terrace of the house we had rented in the Alsace last summer.  Sadly it wasn't to be so we postponed until this years, but that doesn't look like it's going to happen either.  Probably serves me right on account of my mean intentions smiley

I put on a crock pot of Polish burritos-cabbage stuffed with hamburger and rice cooked with tomatoes, an onion and three cloves of garlic. Its not fancy, I remember watching my grandmother make it in 1960.

I know there's an elk T-bone in the freezer, lots of calamari and some venison burger.
Other than "freezer surprise leftovers" the bigger question is do I want to cook for myself?

Do you want me to bring red wine, white wine or beer Ron?  That looks spot on... and I love the fact it's just like your grandma used to make it .

Jonty, stop by any time. I have white and red in stock. Personally I don't touch the stuff, but my wife is Irish.

Toad in the hole x 2 tonight. Neither the best examples of the meal, but they tasted good. 1 x meat version and 1 x quorn sausage version on account of a surprise announcement relating to vegetarianism last week indecision

Terry lived in Peace River country & learned to cook & bake from her Mom & Ukrainian & French neighbours on the ranch.

She makes killer cabbage rolls too Ron! I just put a bug in her ear & she perked up!

Any excuse to eat cabbage!

When I mentioned our local supplier of fine cured & smoked meat I didn't point out that they sell British bangers.

Terry has Yorkshire pudding down to a T . I'm almost embarrassed I haven't tried Toad in the hole.

The way I make Toad in the hole is to take a glass & cut some circles out of the center of sliced bread, Dip them in some whisked up egg holes & all. Throw it in a greased pan & crack an egg in the hole.

Wait until it sets up & cook the other side. You can put sirup on it or add a slice of cheese & put another on top!

That looks superb Dale.  I'm glad you've got thick rice noodles, I find the really thin ones just don't seem to hit the mark and stand up to a curry..  I spent a three weeks sailing around the Andaman sea in Thailand and green curry was my go to meal of choice.

I think, you've mentioned that dish before Bob, I think it's one my sone would love to make.  You should give the YP toad in the hole a try... make sure you've got mashed potatoes and plenty of gravy too!

We spent over 3 hours emptying the fridge/freeze. Down to the glass shelves. Hauled 2 bags of stuff to trash of jars of pickles juice, duplicates, and freezer burn beyond recognition, etc. Filled the dish washer with emptied tupperware. Etc. And we pride ourselves in eating leftovers. Then we took mental inventory of the stuff that went back in. Our grocery bill should go way down for the next couple of months .
Will be eating a lot of sausage meals. Our sausage population is culturally diverse, for sure.

I think I finally convinced wife that freezers need circulation, and clearance from the vents etc.

I should be posting some interesting and creative dishes for a while.

Bravely onward, brad

I made another French almond cake, again using a European single action baking powder. And, once again, it fell in the center. Even though I took new precautions to hopefully prevent it.
I guess I will surrender and go back to double action bp.
So with our fridge clean out I excavated an old jar of amarena dark cherries. After rinsing off the crystallized sugar, I used them on the cake, and dribbled some of the cherry syrup on the cake. And filled the sinkhole in middle cake with them. Brad

This is from a week ago. Made a big batch of meatballs. The first day was over spaghetti, the second over polenta, which is shown here with a side of sautéed kale.

fine pot of "galushkies," you have there.  one term of many, many for that.  For some reason my wife does not use the tomato in the liquid.  And she loves to red sauce up about everything.  But, its not the way her Oma made them!  Brad

Only the finest: Fruit of the Loom ordered by the dozen from Wally World. I think they frame the subject of the shot very well. It's the little things that make it art.

Damn Remsleep!!! Ya had me at meatballs!!! But then ya go and put them on top of polenta!!! Growing up in a Sicilian family we had polenta instead of mashed potatoes.
I never had mashed potatoes until I was a freshman in high school and thought they were the bomb!!! My mom refused to cook them. Come to find out years later , she hated them!!!
I pride myself on my meatballs and my creamy polenta!!! Looks like I could eat at your house anytime!!! That looks amazing!!!

We stocked up to make a "traditional" cassoulet.  Those beans are hard to come by.  Going to have to order them...unless we hack and use more available beans.  At least we found savoy cabbage.

Jonty, that looks good and likely gets better in the days to follow.  Brad

Last night, a quick but fine dinner.   Ribeye, cast iron skillet seared, then sliced and topped with compound butter.  Cauliflower wedges roasted.  Crusty roll.  Paired with a cabernet franc. Brad

Phosphate in Coke is also a common grease-cutter in industrial detergents. Dark rum helps.

Tonight is pasta. Spaghettini (aka vermicelli) in herbs with 1C each fine dice & saute' green pepper, red pepper, stinky white onion and fossilized Hungarian Salami slices found in the back of the freezer. Could be a can of pitted black olives in there. Lots of kalamata olive oil and a serious hit of parmesan.

Last night, another quick and easy, and, using forgotten package of local made sweet Italian sausage,. And working our pasta reduction program.so, spaghetti and Italian sausage with a leafy greens plate, and finish off the cab franc. A piece of French almond cake, using up an old jar of cherries. Brad

Home made burgers here tonight - crappy buns though, especially compared to Liz’s.

Edit, nearly all home made burgers ....... a couple of weeks back whilst kissing her goodnight, a very worried looking daughter told me she wanted to go vegetarian, so she had a store bought hockey puck

I am going to the pub in about 5 minutes for a pizza and a pint of Porter.
I'm taking Bob Blumer's pizza book.

I'm hoping to talk them into trying to make my pizza the 'grill/bake' trick that Blumer uses.

I hope that they will indulge me. Life is such a bore and a chore, maybe a little novelty
will inject some fun into this mud grinder.

It pee'd rain all day. Marvelous to see all the mountain rock dust washed off everything, trees included. I hope to report results on the book method.

I can't get out to my fancy grill because there's dirt jammed in the balcony door wheel track.
The rest of it would be simple.

Brats, beans & broccoli tonight. I'm having a Bloody Caesar "Shocker!"  as the sun goes down here in the west.

I mixed some Killer Bee Honey Chipotle with my Mott's rim shake .

Rim a pint glass with lime & roll it around in the salt/spice mix.

Fill the glass with ice & squeeze the rest of the lime on it & throw it in the glass.

Add dashes of hot sauce & some Real Lime in the bottle.

Pour in some frozen vodka & top up to below the salt rim with Mott's Clamato juice.

Garnish with celery, spicy dilled beans , pickled asparagus or butter fried garlic prawns.

I know clam juice sounds gross to some people but it's like thin tomato juice. Doesn't taste fishy to me.

If I made you a virgin version without booze it would still make a good Spring Tonic!

Brian T - Posted - 03/05/2021:  19:48:52

Lo and behold! The kitchen staff was quite willing to do the double-bake technique that Blumer likes.
The pizza was as good as usual. The thin crust was really hard-tough from the double cooking.
Even 2 pints of porter couldn't fix that. Asked the chef. We agreed that it wasn't worth the extra grill time for side #1.

I never imagined that they would be so indulgent as to make an experimental dinner for me.
By 7:30PM, the place is jam-packed with tables of sled-heads, just jumping and a bar staff of 2.

Hey Al, I’ve got some dirty bird rub on a couple of beef short ribs in the smoker. I’m also seeing what it does to tofu ! The tofu is rubbed with bbq sauce, then dirty bird and is in the smoker along with the ribs. Personally I reckon it could do with a swill in the beef drippings smiley
