Well, the 2019 vintage doesn't have as much heat, so you'll be a bit disappointed in that one. It would be good with pork (no carb), however.

Couldn't hurt to try. Maybe use it on half of the meat just in case. But I think some friends have used it that way. I know they've used it on pork.

Tonight is "lime chicken." (recipe # 5.5 in my digital book)
1C jar salsa, as hot as you like
1/4C Dijon mustard ( the cooking dumbs it down)
2 squirts (2 tsp?) lime juice (go easy. Sour chicken is hard to eat.)
Put 1/4 of this goop aside and marinate scores chicken breasts for at least 30 minutes.
Spits like HELLO in a medium pan with olive oil, best on a grill outdoors.
Plated at the table, offer a bunch of different salts.

It was a very nice complement to the pork loin..
Liz grilled the pork..
N then rested it in the ovin at a low warm..that is how we collected the drippings..
Oh... n another good tip..pork goes on the grill very slightly frozen...
Little ice crystals on the inside...
Makes it far more moist n juciey... ;0)

Believe me, the cats taste OK. Some big herbivores must eat crap as they taste really bad.
Bison change a little, depending on how wet the summer is (sweeter).
I have eaten 6 or 7 2 yr old bison over the past 20 years. That's each a ton on the hoof.
I've got 9 different kinds of meat in the freezer at the moment.
Going to be a whopper of chicken fried rice (outdoor semi-wild farm chicken.)
Ate some last night as "Lime Chicken." = the real chicken deal.

I'm set for at least a week.
Got a chicken from the local farmers market. Loosened it up in a dutch oven, then fried/sauteed the parts in a skillet.
Thawed out some chicken broth I made a while ago. Sauteed some onion, various peppers, garlic, mushrooms, etc., added them to the mix and let them simmer for an hour or so. Then added some of the fresh chicken and some more mushrooms at the very end.
Made seafood broth from old shrimp shells for some future meals.

I was getting tired of seafood and bison, but I was also trying to hold out for a fresh local organic chicken instead of the ones from the store. Finally, today, I got one - they're not always available, depending on the time of year.
Forgot to add - the leftover parts and bones from the new chicken will make the next batch of chicken broth.
Waste not want not.
