Every time I read your foodie posts, I need to eats a Tums or two-just reading it. But I sure admire how you and LIz eat and enjoy your food. Unfortunately, "spice-heat" is just does not set right in my tummy, a product of spice-abuse while in college, going to school down at the border. Brad

We're having beef stir fry with it again tonight. It sounds weird but it really works! It turned out awesome last time.
I tried too many times to use what they call stir fry beef & came out with rubbery boiled slugs.
You use 3/4 tsp. per 250 grams. ( you can convert to freedom units!). I think they used way too much in the picture.
I toss it around in a plastic bag & stick it in the fridge for a half hour, Rinse & dry it off & use it how you normally would. Total game changer!

There are a few ways to velvet meat , but using the baking soda is probably the easiest.
I use corn starch when velveting chicken for Asian dishes as I do like a little chew or texture to my meat. The corn starch gives it a soft coating and a nice mouth feel.
The oil bath method of velveting is too time consuming and more mess to deal with but works well also.

Tonights adventure is homemade French fries . We were saying how takeout fries from the chains all suck.
We used this slicer to cut up the potatoes. A neighbour gave it to us . It worked really good! Ours is in orange.HaHa!

Terry knows how to cook , I work the dish pit & chopping board . Going for the double cooked ones with smash burgers in the cast iron. I have a few poutine gravy packets. Just add water, squeaky cheese curds & crispy fries!

Chemo day today, so threw some bone in pork chops, and some applesauce mixed with a little BBQ sauce into the crock pot and left it go while were away. I was o lying there for about 3 hours, but I never k ow if im getting confiscated for blood transfusions or whatnot. Everything was thankfully good today, so chemo and home. And. The pork chops were falling off the bone tender! Yum yummy.
