Fall off the bone pork chops are damn near as good as it gets Paula !!! I think I’m done with summer food and ready for fall / cold weather food……..aka…….soups, chili, crock pot dinners, casseroles, and anything that needs to be sopped up by some crusty bread and has creamy sauce or gravy on it !!!
Bye Bye hamburgers, hot dogs, brats, pasta salad, salads, cold dishes, relish trays, fruit salads, and meats with a skewer in them!!! I’ll see you all again next year!!!

Just to make sure I’m transitioning ok , I think I’ll go to Taco Bell tomorrow for lunch and get my head straight!!! LOL

Bone in chops are the best! I sometimes find 4 packs with chops almost 2" thick. We cook 2 & freeze the other 2 for next week. I was grabbing a pack & the butcher came out. I told him how great they were browned up & finished in the oven in the cast Iron. Terry cooks them to perfection! I said I wished he could cut them thicker. He said he just cuts them according to how big the ribs are. DUH!

I have brined & smoked & then fried them up. A bit of Tender quick or just plain kosher salt, some fresh rosemary, sage & thyme & a bit of water. Pop them in a freezer bag & massage them every time you go in the fridge.

Rinse them well & fry in bacon fat with the herbs from the marinade. It's a step up from pork chops in mushroom soup from back in my bachelor survival days!

My son gave me the Howie's secret.

Ask for extra sauce. Evidently, when they add sauce, they add a little cheese. He was right. In the past I found their pies to be dry, but this one was good.

Two weeks ago while camping I picked up some 2” thick bone in chops and did them on the little smokey Joe !!! Best pork chops I’ve had in 62 years!!! My compliments to the pig and the butchers cut !!! Thicker is better when it comes to chops and steaks IMO

DLe, agreed on the thick cuts. Gives me wiggle room when going for some sear and still have medium rare inside. I mostly make pork steaks. I have the butcher cut them about 1-3/4” ish, I pick a full shoulder or butt and have them slice it up on the long side. Stick em all over with a tenderizer, Marinate them, grill them on hot coals or over flaming wood, preferably on a schwenker grill. Some sear , a mix of md rare +/-.

Nothin, and I mean NOTHIN is better than well seasoned crispy charred pork fat on a chop or a pork steak!!! Gnawing on da bone ain’t bad either!!!

I used to be the pork steak mushroom soup guy! Still love it! Get a big heavy pot & oil it up & get some onions & garlic in there. Brown them up & add beer if it gets too hot. Push it all to the sides & heat up a spoon of bacon fat & drop your pre seasoned steaks in . Get some nice colour on both sides & add some canned mushrooms,  Add more beer & your mushroom soup when it looks good! Make up some rice, potatoes or egg noodles a veg & Bob's yur uncle!wink

P.S. don't add salt until you taste it!

We are rarely organized on what to cook. However, this weekend we actually have each night set. Last night, BLTs to use up some of the remaining tomatoes with side a side of more sliced tomatoes S&P’d. Tonight, I am making sloppy joes and coleslaw-my way, not wife’s way. Sunday evening I am grilling small bacon wrapped beef filets with in the grill salt crusted baked russets, and corn microwaved on the husk. Perhaps a salad as well. Brad
