To keep yourself safe, from Covid, I would put Bob on the pizza and pancake diet, as that stuff is thin enough to slide under the bedroom door!!!

I like that. The slide under the door diet. He likes both of those, so it could be an option. And as a tea-snorter-thru-the-nosie person, myself , I'm glad I could give you a laugh. As of now, I had same Cream of Chicken soup, and there's a bottle of Gatorade sitting on the table making faces at me.
Just thankful I seem to have a really mild case of the rona, and for that I am so thankful.

Just so you know, me and The Boy Wonder had to make a "Run for the Border" after I read your post. We rang that Bell hard in your honor. Many tacos, chips and several burritos were devoured on your behalf. My DIL thanks you, saying that a Doritos Taco was just what the baby wanted, as she is seven months pregnant.

Breakfast, using up some of the last blueberries of the season. Blueberry Pancakes with homemade blueberry compote syrup.
Just wish I had some buttermilk to make the pancakes with.

I rarely have buttermilk on hand, and, rarely rarely know I am going to make waffles or pancakes ahead, so I often use the hack of souring the milk with vinegar, lemon juice, etc..
that said your breakfast looks great.
There's lots of beautiful corn in the stores these days. I bought 4 big fat cobs yesterday. I've been messing with Mexican street corn lately. I CAN get real Mexican ingredients in Victoria but I'm not into fighting traffic on B.C. Day long weekend! We can get Cilantro. One thing I can't stand!
I worked off this recipe https://sundaysuppermovement.com/elote-recipe/ . Crema wasn't available so I used sour cream. Parsley for cilantro. I used Mexican chili & Chipotle spice.
I have used goat cheese as a substitute for cojita before but found a chunk of way over priced Queso Manchego made in Spain! I read they taught Mexicans how to make it so it's kinda authentic. Was great!
It turned out Killer! Well worth trying!
Edited to say.. BHO spellcheck doesn't speak Spanish!
Brad! A Caprese salad is a good way to use up fresh tomatoes & basil!

Bob, we recently tried a version of street corn with a Mayo / sour cream mixture, queso fresco cheese , chili powder or good spicy rib rub, cilantro ( if ya like it ) and a squeeze of lime . We’ve also used Parmesan cheese and it was awesome too !!!
Where the hell has this been all my life ??? I remember seeing it years ago at a little stand in Minnesota across the street from a Mexican Mercado grocery store and checked it out and thought …….who the hell puts Mayo on corn???
Damn, I wish I would have tried it sooner. I would not want to eat it all the time , but what a treat once in a while………..who knew!!!
My son in law lives in Upstate New York and and he gets Dinosaur Cajun Foreplay BBQ rub. He puts it on his buttered corn. I can hardly eat corn without it now. Amazing stuff !!!

Elote is popular in our area. The family makes it on occasion. A jar of elote seasoning is nice to keep in the pantry. Found other uses for it, as well. brad

After Song Circle (on the shore of windy Lake Ontario where we watched sailboarders fly past at the speed of light, and one poor guy take forever to right his craft - he's up, he's down, he's up, he's down, he's never gonna get up, he finally figured it out and we don't have to call rescue), I headed to the Pasta Shelf, where I got two 8" pizzas, green pepper, tomato, and onion for me, and a Silvio (fresh garlic and olive oil, prosciutto, roasted red peppers and goat cheese, finished with fresh arugula and balsamic reduction) for the Mrs.
From here, though, we can't see the sailboats, but we can sure hear the racket made by the poker run boats and all the wannabes in their power boats.
My brother sailed and raced his boat out of the Royal St. Lawrence, Montreal. When I asked him the name of the boat, he replied, "Chariot of Fire." Some time later I called him and said. "I've named my bicycle ... Chariot of Rust!" I don't think he exactly appreciated that.
