That was a store bought Tamale, but everything else homemade. I make homemade tamales once a year and make a pile of them and freeze them and enough for the kids and their families. They are time consuming as they take a long time to steam and a lot of preparation. Simple food but so damn good!!! I’ve had bad ones too and I think people that don’t like tamales have never had good ones!!!

As I said in an earlier post , this week has been a good eating week and I need to stay off the scale for a while, but it’s soooooo damn good. This last Sunday I needed and wanted some good spicy Thai food and just the week before I was at an Asian / Vietnamese market in Minnesota and restocked my shelves.
I made a phenomenal (if I don’t say myself) Thai red curry chicken noodle soup!!!
We still have some snow on the ground here and it was snowing while I was making this and perfect dish for this $hi##y weather !!!

Oh, almost forgot !!! Mrs. Slammer made some delicious veggie spring rolls and a peanut sauce for dipping. Peanut sauce was so damn good I could take a bath in dat $hip !!!

Cold weather food was the theme this week I guess . Tuesday night was grilled cheese and tomato soup with a leftover spring roll. Grilled cheese had provolone, Colby and 12 year old cheddar ( fricken amazing) cheese on artisanal Everything bread and Mrs. Slammer made homemade tomato basil soup Parmesan soup!!!   Not your average grilled cheese and tomato soup!!! That 12 year old cheddar is a treat we buy ourselves in Wisconsin on the way to Minnesota. They also have 15 and 20 yr old cheddar. Never tried that but bet it’s crumbly and crystally. The 12 yr old cheddar by itself is a cheddar explosion squared in yer mouth!!!

In honor of Cinco De Mayo AND my birthday, I decided to make some of my favs!!!
Filet mignon med rare, baked potato with sour cream, salad with Greek dressing and feta, black Tiger Shrimp de Jonghe , and sautéed mushrooms. The best is yet to come…………….stay tuned!!!

Fig , you’d be proud of me, because I did………..all but a bit that I’m saving for steak and eggs tomorrow morning!!! Made up for it with shrimp and had to save room for cake!!!

Dayum! That Do Look Good!  We're trying toad in the hole tonight. Terry is a baker but can't wrap her head around it but she makes killer prime rib & Yorkshire pudding! She has nailed Beef & Turkey Wellingtons. 

I'll go out & get some fresh rosemary, thyme , sage & parsley to mix in the batter. The recipe has mustard powder & we have some Keens.  Need to work up some gravy. 

It's Friday night after a work week! Woooo!Hoooooo! It'll be fine!

Ate and drank too much and fell asleep before I could post the Piece de resistance !!! Mrs. slammer made me a 3 tiered Chocolate Dulce de Leche cake that had enough butter in the cake and butter cream frosting to drown a pail full of lobsters!!! Just when ya think yer day can’t get any better, ya get this piece of spectacular dessert. I’m not a big sweets person, but DAMN !!! Happy Birthday to Me !!!

Beef fried rice and steamed pork dumplings were on the menu tonight!!! Hate to toot my own horn, but the fried rice was better than ANY I’ve ever had!!! Got lucky I guess.
Pork dumplings were from Trader Joe’s (Excellent)

Was in the mood for something sweet, so made Crescent roll apple turnovers with glaze. They look kind of funky, but I think they will taste just fine. New recipe, lol

Easy peasy, as I don't have the energy to get creative, and calories are my friend.

Mother’s Day dinner, one daughter away on business, the other took her mom to a nearby town to visit several museums and a winery.
Meanwhile, I worked on dinner th I s evening.
Grilled prime ribeye, roast eggplant slices in the grill, salt-crusted baked potatoes in the grill, then cranked up the heat and smoke to sear and griil the steaks. With a sautéed mixed mushroom topping. Paired with some nice Oregon reds. Cultured butter lathered on everything. Brad

Sheet Pan Lunch for my wife and I. Zuccini, Sweet Potato, multi-colored cherry tomatoes, white, red and purple potatoes, unsalted cashews, chick peas, onion sprayed with Avocado oil and seasoned with Rosemary, thyme, coriander, cumin, coarsely ground pink Himalayan salt and black pepper. Air roasted in the air fryer toaster oven.

Thank you.  My wife introduced me to it.  If I'm making it for myself I'll add chicken or beef strips, and she adds shrimp, but I don't eat fish and she doesn't eat meat so chick peas provide the protein.  Real easy to make, mostly just cut up the veggies, season and cook.  High volume, low calorie, high nutrition.
