I happy to eat a sandwich or soup a couple of days later, to offset the steak meal cost. But we usually get two meals from a big steak. So that makes the cost tolerable.
I have begun to watch for sales at our big grocer for quality ribeyes, in their fresh cut or cut to preference butcher area. I usually find I can pick out a higher than labeled grade steak amongst the row of you-pick-em cuts in the counter. We usually buy one big steak, that I always cut up into strips about 1/2 inch thick on the board, then the pile gets treated to a scoop of herbed butter. Then we each pick the pieces we want, and usually have enough for a leftovers meal with the remaining. Yum.

Pot roast in an enameled cast iron Dutch oven:
Chuck roast, seasoned with pepper and paprika and browned
A packet of onion soup/dip mix
A can of Campbell's cream of mushroom soup plus half a can of water
One onion, diced
Several cloves of garlic
Several baby carrots
Some parsley
Braised over low heat for approx. 2.5 hours and served over garlic mashed potatoes

What would we ever do without those packets of onion soup mixes on hand? Magic in a packet!
Those various German "Maggi" brand packets are handy as well. Sorry, Europe, you do it too!

Variation on that:
Slice the garlic cloves & insert them in small cuts in the roast
Add some red skin potatoes (quartered-skins on)
1 cup red wine
half dozen, or so black peppercorns
more water as required
When done, remove potatoes & mash them with half & half minced garlic, & scallions
I used to do this in a crock pot, letting it cook all day while the kids were in school & I was at work.
Crock pots were a blessing for single dads
