Going out for a Friday night Fish Fry Last night was thwarted by bad weather , icy roads and just didn’t feel like going out in the cold !!! With no backup plan we decided to stay in and wing it. Ended up with a little Charcuterie plate, spinach and strawberry salad and steamed pork dumplings!!! The aged Swiss cheese stole the show when paired with Speck ham !!! Was a great alternative to driving through crappy weather!!!

I like about all speck, but I will never forget the time when an Austrian visitor was at my brother's holiday party, and brought  with him some speck from back there.  Wowser, it was good.  He would slice off very thin slivers like it was gold, to put in our plate with many other goodies.  Brad

Sous Vide New York Strips at 133 degrees f for 3 .5 hours and then seared in a cast iron pan at super high heat from my wok burner . Steaks will be seared in 100 % Wagu beef tallow !!! More pics to follow!!!

Detroit style Tostados...

Melt the first corse of cheeze on corn tostados..

They do not fall apart when ya cut'em that way.. :0)

Rest of the stuff the way you like it.. ;0)

Oh My !!! That looks amazing!!! Told Mrs Slammer the other night I’m not cooking any steaks under 2 inches anymore. Thicker is better and we only need one for the two of us and may have to wrestle her for da bone !!!
BTW, I love Tostadas……….my “favorite” !!!

Tonight Marilyn fixed Fideo (Spanish pasta) as a side, version rather than a soup version. Served with pork chile verde and tortillas. We have found no where in wichita, Ks that serves Fideo. Marilyn discovered it from a high school friend. Many years ago. Brad

No Detroit Style this weekend and for the Packer game I changed it up and made a Thin crust Bar style (old Wisconsin bar pie) with homemade Hot Sicilian fennel sausage and tons of onions. Let’s just say it didn’t suck!!! Goooooooo Packers!!!

Brad I just about thought you stole pictures from me!!! Mrs. Slammer has been making Fideo and Sopa de Fideo as long as I’ve known her. She has no idea where she got the recipe from, but we sure love it and also serve it with pork chili verde. She even makes homemade whole-wheat tortillas which surprisingly are quite good. Always trying to be healthier that one!! Nobody I know has ever had Fideo or heard of it. What are the odds???

Marilyn had a high school Hispanic friend that she still keeps in touch with.   That  is how she ended up with a family recipe for a typical meal.  I am not sure what part of Mexico that family came from, so fideo might be a regional dish down that way?  BTW, one of Marilyn's favorite eats when at a Mexican food restaurant are sopes, and also green chile verde-if its on the mild side.  Brad

Years, decades, eons ago, I was into square dancing & clog dancing. Alcohol was strictly verboten at both activities. Although afterward, they partied hardy, always at a bar that had a band, and served pizza. To this day, I avoid pizza like the plague. Some of you, however, seem to be nursing a pizza fetish for all it's worth.  laugh

That’s looking mighty fine Brad!!! I find the dough is so much easier to spread in the pan vs. regular pizza dough. It amazes me the raw dough being so wet or moist gets crispy , airy and fluffy, and chewy gooey at the same time.
My son brought me some Brick cheese from Widmer’s Cheese Cellars in Theresa, Wisconsin. Best brick cheese in the U.S. period!!! He also knows I love their aged brick cheese and brought me a brick of it. I have to ask……..how can something that smells like dirty diaper in the hot sun taste so good !!! It’s about as close to Limburger cheese as you can get, but buttery and smooth. A nice slice of it on Caraway rye bread with a slice of onion and German mustard and an ice cold beer and a couple sweet gherkins and I’m a happy camper!!!

Turken soup (turkey and chicken carcass stock from the holidays, scraps of a roast chicken we had yesterday, diced carrots, and egg noodles.) Bonus enchiladas from a few days ago made with chili leftovers.
