I've been learning to make Indian food. Lots of spices. Tonight's meal includes Palak Paneer (spinach with homemade cheese), Chana Masala (Chickpeas in masala sauce) and Ghee Rice (basmati rice with onions, hot peppers and spices) along with some Naan Bread and Chapati. Everything homemade from scratch, even the cheese.

I am impressed. We have several folks here that do Indian cuisine.
Indian cuisine remains on my bucket list, but I just not broken the ice yet. Brad
If you've ever been to Spain, you probably ordered Paella. I sure did, and loved it. Here's my homemade version with rice, saffron, sofrito, red pepper, onion, carrot, artichoke hearts, peas, Kalamata olives and Impossible Steak. First time I have ever used saffron or made a sofrito. They really do add a wonderful flavor to the dish. The socarrat was perfectly brown and crunchy. Tastes fantastic. I have some leftover sofrito, so, I will be making this again soon.

Paella good, discada even better. Sadly I did not even use my discada pan last summer. The saffron is the big treat, eh.

Impressive looking dishes!!! I was on the Indian food kick for awhile trying lots of different curries and masalas . I think I over did it and ran out of my good spices and have not replenished them. Might be time to do so, as I now have a hankering for it again and won’t go off the deep end this time. Good Naan bread is amazing especially when it’s fresh and still warm!!!
Don’t even get me started on the Paella !!! The problem in my world is……..
There is too many types and styles of food that I love and not enough room in my garage for all the smokers, grills, woks, discadas, pizza ovens, tandoor , deep fryers, hibachi, flat top griddles and whatever else I end up buying because I thought it was a good idea!!! I guess I could always make Mrs. Slammer park outside!!!

No need to be intimidated at our home. I grew up at best middle of middle class. In a "life of Riley" home, Marilyn grew up in a small W. Ks town of barely modest means. We enjoy all visitors of any upbringing. Heck, we thought everyone in Conneticut were rich folks! Brad
You sure set a nice table, Brad.
I got ambitious last night & made Shrimp Étouffée, including the obligatory pot of rice & complimentary Chardonnay. No pics or fancy table settings, though, as there's no one else here to appreciate it. Lot of trouble to go to, especially for just one person. Although, the payoff justifies the effort. ![]()

A blessed meal, for sure. One day, an occasion will come to share a dinner for the soul like this. Brad
