Dale, I am so envious of your “backyard” fishing. When I was growing up, I was spoiled to having access to several relatives great private fishing ponds, mini lakes, and big creeks. Eventually, all those honey-holes disappeared to tragedy, misfortune, and death. I thought I was set for life. ??. Brad

No pics tonight, but had a hankering for Scalloped potatoes today. Made a Le Creuset Dutch oven full of em to go with dry rub sirloin pork chop, cut corn off da cob, roasted Brussels sprouts and a bit of salad !!! The scalloped potatoes should be cool enough to eat tomorrow some time!!! Gotta love those brown crispy edges scraped off da pan!!! Dishes like that just cook and taste better in enameled cast iron!!!

Brian, scalloped potatoes are slices taters and some onions covered with a cream sauce ( usually made with a roux) poured over the taters and then baked till bubbly brown . Add cheese to the mix and you have Au Gratin potatoes. I added a little cheese to mine. My Aunt (moms sister) is well known for her scalloped potatoes and scalloped corn!!! She always said the secret is……………if it don’t boil over and make a mess in the oven, your not doing it right!!! Gotta have those burnt edges in the pan to give it THE flavor!!! Mine didn’t boil over and make a mess, but I sure made a pig of myself eating them , and the leftovers tonight will be better guaranteed!!!

Mom made a lot of what she called 'scalloped potatoes.' Something I never liked.
Sliced, S&P, butter and milk. Baked
Just bake the potatoes. Butter, salt and fine dice onion of some kind suits me.
Tonight is novelty seasoned curly potato fries and battered/baked onion rings.
Meaty thing reheated seasoned burger.
STUD, I’m chomping at the bit to fill the freezer with venison in the upcoming weeks!!!
You are sooooooo right as in that is one of the finest cuts of meat!!! Just about kills me when I see people here slice em up thin and fry em with a bunch of onions and overcook them. IMO, it is the best filet mignon there is!!! When I cut up my deer I keep the best cuts for steak and the rest goes in the burger pile and ground with 20% beef suet. Can’t beat a good veni burger !!! The only store bought beef I’ll buy is a good Ribeye or NY strip once in a rare while!!!

My mash bill for a big deer butchering was: the backstrap, a few steaks, a couple of good roasts, and the rest ground, and a little bit of deer sausage. Made for a nice freezer selection. Wife always insisted on a German "Sauerbraten" pot roast.
Good luck on your deer hunts, whereever you are. Since I travel much of Kansas year around, I can say there are once again plenty of mulies and white tails, and nice racks out there. Too many! The Kansas Fish and Game authorities keep adding allowed permits. Get a doe permit, get a buck, get a black powder permit, get a bow permit. Get them for your wife....And fill those freezers! Brad

Yikes! Looking at it in its new home makes me realize I need to up my kitchen game. Been planning to paint and new floors, etc; but life has been getting in the way with 'C', eyeballs, and pickup trucks. My life is turning I to a bluegrass song, heehee!
This stove is so nice, and way above my usual purchases, but as I work in foodservice, I know what a stove can be like, so we said the heck with it and bought it. You only live once.
Oh, and here's the culmination of three weeks of intensive work. Don't have any before pics, but the bed was rusted with holes, and Rocker panels were shot. Oh, and brake lines, fuel lines, and a few other things here and there needed some love.
A buddy of ours had a garage, so worked on it there. Redid the rockers (old aluminum stovepipe works great), replaced bed, as I was extremely fortunate to find one in my price range, and same color (close), to boot!
The local pub phoned. They had leftover beer-batter fried halibut, black cod and crabs, straight from the west coast. Delivered to my kitchen no less. Chopped a lime, found a nice smoked sea salt and bellied up to the trough to eat everything.
My first ever DF crab. Believe it must have been over done as there was no more that a few stringy bits dried up in each leg piece. I've had all kinds of boiled ones in my own pot and others.
