We had my Son and DIL along with 2 grandsons home this last week and one night we wanted Steak dinner and I owed my son a good meal for his services of installing a new kitchen faucet for me. Good Boy !!!
My goto meat market didn’t have great looking ribeyes, but, they had some nice looking sirloin steak. Bought 2 chunks of thick cut (almost 2”) equaling 4.3 lbs .
Marinated for 24 hours in a red wine / Greek seasoning and olive oil mixture.
Then removed from marinade and vacuum packed.
Sous Vide at 131 degrees for 7 hours.
Removed from water bath , patted dry and seared on a cherry- hot cast iron pan with wagu tallow for about 45 seconds on each side and fatty edge.

Let me tell you right now, it will be a while before I buy Filet Mignon (aka tenderloin) , ribeyes or NY strips at $16.99 to $26.99 per pound. Holy crap, they were the amazing and even the DIL who is a food snob (but yet I’ve NEVER seen her cook OR lift a finger to help in 10 years) liked it !!! Another story!!!
Tender like a filet but soft like prime rib , flavor to the extreme, and fat that melted like butter!!!
Did I mention Flavor???

$38.00 for the steak . Had a beautiful salad, cheesy mashed double baked potatoes, some decent wine , and a Birthday cake for Mrs. Slammer!!! What a Meal!!!

Would have hated to see the bill for that meal had we gone out to a decent steak joint , if we had one!!!

Slammer, sounds great. I fear sirloin, unless at at joint with a reputation for a sirloin steak. I while need to venture out from my comfort zone, and try that. I love the thick cut.
Btw, I am jonesing for a thick 1-1/2” ish flame broiled pork steak on the schwenker grill. Like your sirloin, a 24 hr marinade. Brad

Tomorrow, for Independence Day, we are doing (as usual) a traditional hot dog dinner, including plain ol hot dogs, potato salad , cucumber salad, pickles, chips, watermelon, and beer. Most of our peeps are spread out this year. It may only be Marlyn and me. :-( oh well, usually I am away on job, so just being able to make sure the crazies don’t burn down our home will be nice. Hoses are ready!

Chicken wings on the Pit Barrell. Bacon wrapped jalapeño poppers on the gas grill, and a cold Coors light.

I tell you, these are the best wings ever! Cooked over live charcoal. The Pit Barrell is designed to run with the re-bars in for hanging meat. The bars fill the holes, leaving a small space for the smoke to vent. It normally runs about 275, once it settles in. I wanted higher heat for my wings, so I left the bars out.  I was cooking on a grate instead of hanging.  I didn't have a thermometer in, but I'm guessing it ran about 375. One hour, 30 minutes on each side, and man was it good! Old school cooking, directly over charcoal with the fat dripping into the fire and vaporizing flavor back into the meat.

If you can find eye of round steak, it's one bone away from the rib eye.  Less expensive and beefy good.

We had a party of 11 yesterday afternoon - no pics, as we were too busy. The menu consisted of:
- Ribeye steaks, grilled over charcoal with Montreal seasoning
- beer can chicken in the smoker with Hot Dirty Bird
- Asian style noodles with chicken, shrimp, and a garlic ginger soy dressing
- olives
- potato salad
- a cold broccoli salad with a garlic, olive oil, and lemon dressing
- key lime pie (purchased)
- white chocolate coated strawberries
- chocolate chop cookies
- beer, wine, and seltzer

Man I would love to come to one of your parties!  Do you still have your D.I.Y. barrell cooker.  I remember when I got the Pit Barrell you made one.

Deb texted me yesterday to tell me she cleaned the jalapeños and stuffed them and wrapped them in bacon. I usually handle the peppers. Deb said she was crying and puffed up, felt like she had been sprayed with tear gas. She scraped the seeds and ribs out of the chilis, so they were real mild and oh so good. I told her next time to let me do it, or get her a hazmat suit like in Breaking Bad.
