This morning: I made cornmeal mush yesterday and refrigerated the loaf in pan until this morning when I fried it. Served with eggs from some nearby city chickens. Bacon from a local area butcher. Even the coffee beans for our coffee was roasted at a nearby smaller town.
The first batch of mush I fried , I cut 1/2” slices. The second batch I sliced at 3/4”. Fried in butter. We like the thicker slices. Both of us ate a lot of fried mush as kids. It’s hard to find in a diner way up north, here. As a kid, southern Kansas had a higher amount of “southern” around.

Last night, BLTs. Area small town made bacon, my home grown tomatoes, tomatoes topped with Marilyn’s tabouli (made from our parsley and Tom’s, corn locally sourced, pickles she made from our home grown cucumbers.
Marilyn commented it was the best bacon she had ever eaten! Brad

Saturday night dinner: I took our leftover mush and rebranded it polenta. While I CI skillet browned the polenta slices and cooked the rebranded roastin ears-now elote, Marilyn skillet cooked chopped up tomatoes from the garden with garlic, scallion, a bit of tomato puree, and S&P. And tossed in some pan grilled shrimp. Paired with a nearby Kansas vineyard wine.

Yeah. I like to cook whole sides, but the bottom is too close to the fire and gets crispy. The best cooking temperature is up higher in the barrell. I cut them in half a lot. These I left whole.
N..like'em..as you say..with some ..bite.. too..
I like'em to hang on the bone.loosely..
But not just fallin off..
Alltho..if that happens..i will not gripe.. :0)
Good things to go with ribs are..corn cobb or kernnel..rice.. coleslaw..
apples..baked or sauce..
Oh..n..lots of ..napkins..
