Penne al dente with re sauce.
I like to keep the sauce simple.
Fry some garlic for a minute or two.
Add some onion, cook for a few more minutes.
Add meat if you want to and brown the meat.
Add good quality tomatoes. Cook for a while.
Add basil, oregano, and if you like, a little red pepper.
Cook for a long while. If you used fresh tomatoes or home canned tomatoes, cook longer.
You can add a little red wine near the end if you want to.
That's it.
Tonight I used Italian sausage. Sometimes I don't use any meat, sometimes I do.

We went out for a fish fry last Friday to a small town diner/restaurant. I had cod and Mrs. Slammer had whitefish. One beer and a pop and with tip it was $62.00 which is better than I thought but Damn!!! Goin out to eat used to be fun and a treat, but now it’s getting ridiculous. Glad I enjoy cooking and pretty good at it!!!

Nearly every fall I make a fresh apple cake. Often a different recipe or style. I enjoy the anxiety, and it keeps my failure rate steady. This is from “Southern Living.” It’s called an “Old-Fashioned Apple Dapple Cake.”
Diced gala apples (that actually tasted good) , toasted pecans, cinnamon and a typical cake batter, though my batter was a bit thick, until I stirred enough to get some apple juice mixed in. Took the extra batter and filled some mini bundts. Brad
I really enjoy fresh apple cakes. My favorite is one that uses fresh “shredded” apples, but I could not find my recipe at time needed.
But, following a YouTube vid, the dicing (1/4”) ish, went fast, not coring, but peeled fast.
Oh, and the cake with the salted caramel hit was great. It was a cake where before turning it out of pan, you poke “cake tester” size holes all though bottom and fill with hot caramel sauce, rest it some more, then turn it out, rest a bit more and drizzle , re-heated, remaining sauce over the top.
