Brad and Fig, those look pretty damn good!!! The dough for Detroit pizza is a lot more wet than regular pizza dough and gives it the light airy crust along with the oiled or buttered crisp bottom. And yes Liz, I didn’t think reversing the toppings order would make a difference but it does and I like it better than traditional!!!

The particular balls of dough I bought were soft and wet and fresh-it finger spread nicely into the rather large pan. When i get back in town i will make another Detroit Pizza, along with making the dough. I read a punch of ratings on jarred pizza sauce, and picked a couple of them up. I really can't complain at all. We like it not too sweet, not to sharp. That said, we always have ingredients on hand to make a pizza or spaghetti sauce, if needed: canned Italian plum tomatoes in sauce, canned diced tomatoes, tubes and cans of tomato paste and tomato sauce, dried spices & herbs, and in summer our own garden grown basil and oregano, etc.
I will order some Wisconsin brick cheese, as well. yet the suggested substitutes were also good.
And when Marilyn approves, I will definitely make again. Brad
I have enjoyed using this adjustable baking pan. A bit deep than regular baking sheet pans. I forgot what German baked good I specifically bought it for? It’s just wide enough that for a Detroit pizza you end up with a center row of “no crust” pieces. Seems that in a group, there is always someone who does not like pizza crust in these parts, anyway. Finished off a Costco chicken & left over shrimp étouffée. Threw in some Holy trinity, okra, andouille sausage, & rice, sour cream, coconut milk, + more spices & shrimp. Not too shabby, considering. RTE's?
