Freezing weather and moisture arrived in Wichita this weekend. So...
I gathered up a hob load of the remaining peppers, tomatoes, a big onion, some fresh oregano and processed the whole mess; then added lime juice, a bit vinegar, salt, and cumin. I processed to finer than chunky-coarser than grainy. I ended up with about 2 quarts of salsa. Some I will freeze, some we will eat until it starts growing stuff. I figure with the lime juice and vinegar in there and keeping it refrigerated, it should last a while.
At least through a few football games and bags of tortilla chips, and a few tostados.

Jiffy Corn muffins are great!!! Doctor em up a little like the ones above and you have something special!!! Just read a food survey recently on corn bread and corn bread muffins and Jiffy (one of the least expensive) is ranked at the top if not THE TOP !!!
Can’t say it would suck with a chunk of that ham!!! Yes please!!!

I had to work lat tonight and it was cold and snowing like mad when I got home.
Mrs. Slammer took us south of the border with some nice hot Chicken Pozole Verde accompanied by some Cilantro Lime Coleslaw, Jalapeño Popper Dip and Blu Corn Tortilla chips. Sure warmed up after that!!! The Verde was all homemade from fresh tomatillos, onions , garlic, green chiles, white and yellow hominy, chicken broth and spices!!! I guess I’ll keep her for a little while yet !!! Can’t wait for leftovers tomorrow!!!

That looks great.   I assume you mean south of the Colorado Border, into NE New Mexico.  Home of Hatch chilis and Posole everywhere.  We try to drive there about every year, just to eat posole as often and at as many places possible, along with blue corn pancakes and chips.  Then after a week or so, drive home with several bags of dry hominy.  And, suck rolaids all the way home to Kansas.  

I must remind Marilyn, its time to make our first batch of this New Mexico stew.  Funny, when I was going to college at NMSU down further south, it was served a lot in the dining hall, but I never knew what it was called.

I will buy it (on occasion) when I am headed out to a week long job and do my groceries shopping. Most job trailers I live in, have no running water, and only microwave and tiny fridge, for foods.  So I buy prepared pre-cooked stuff, and fresh veggies, etc.  I cannot do dishes without a lot of effort, therefore, that squeeze bottle is handy, for, mayo, mustard, ketchup, sauces, salad dressing, and sour cream.

Not so much at home, and Marilyn hates squeeze sour cream. See Al's comment!

Tonight from the instapot, “Mississippi pot Roast.” Served over white rice, with seasoned canned green beans, with the gravy from the pot. A Kentucky bourbon to help me prep. Brad

Our Sunday dinner, just Marilyn and me, included a grilled bone-in ribeye, on the grill cauliflower head, and on the grill salt-crusted baked potato, with on the grill Italian bread wedges. Paired with a Jessup Cab. So yum and simple. Brad

I hate to even post pics knowing that Fig isn’t eating much right now, but last night was the usual Sunday pizza night. No meat, just lots of fresh mushrooms and onions!!!
Didn’t miss the meat at all. Sorry Fig, but if Brad can post food porn pics like the one above of his steak dinner, I figured it’d be ok!!!

I have my new 8x10 dark Detroit pizza pans and the larger ones as well.  But until I find better pepperoni I am on strike.  I may have found it yesterday in Boar's Head meats in deli section.  They are larger sandwich size rounds so thinking I could quarter the rounds.  That said, using the Italian sausage was very good.  Brad

Pizza does not rate high enough on my list to justify a pizza pan. So when my Texas daughter asked the whereabouts of such, I told her I don't do pizza, use the cookie sheet. When her pizza was done, she asked about the pizza cutter. DUH...

Now there's a combo I hadn't thought of, but who doesn't like a Cheeseburger and a Chocolate Shake?

 Chili Dogs, Crinkle Cut Fries, Fruit Salad and Chips with Pico de Gallo. Should'a had some Orange Jello with that, too!
