Sunday night family dinner. Mostly Italian night! Roman Chicken (a variation of chicken thighs cacciatore). Served over a mound of mashed potatoes. Celeriac salad/slaw, Italian loaf, wine. *Note the small skillet is a hacked vegetarian version. It was fun to give the ol cast iron some lovin again. Brad (btw: a recipe adapted from Chef John)

I bought a tin of oiled anchovy’s for one filet to add umami to the Roman Chicken. What to do with the remaining tin of anchovy? Awh, thinking of my youth in the 1950s-pizza. Every pizza in my part of the Midwest had anchovies, or an option to delete the fish. So, I made an anchovy pizza…a cheese pizza topped with anchovy filets, thin ribboned basil from the herb garden, chopped Kalamata olives, and thin slivered red onions. Topped after baking with more. Ribbons of basil and grated Parmesan. Wowser, about 60 years of memories flooded my brain. Brad
Good quality anchovies can be amazing in foods and sauces. They get a bad rap from cheap salty ones that are so fishy and ruin the meal. I hated Bagna cauda for many years until we discovered good quality anchovies. Pay the price and enjoy.
As far as storage, wrap em tightly in plastic wrap and another container and freeze. Separate into portions.
