Oh boy, they're a favourite of mine - a genuine hard work but worth it meal.
Chicken and sausage cacciatore pizza--roast chicken breast, Italian sausage, red and yellow bell peppers, onion, and some Thai red meanies with Trader Joe's pizza sauce. Very loaded! I used herb pizza dough from Big Y (they were out of beer dough, which I think is better) and pre-cooked it for a few minutes before putting on the toppings.
No cooking for me for a few days. We’re in Illinois for a wedding and won’t be home till Tuesday. Already had the worst, and I mean the worst Gyro of my life last night and it was from a Greek family restaurant that we love to go to and get carry out. Won’t be ordering that again, but their French fries and pork tenderloin sandwiches are the best!!!

Originally posted by reubenstumpI have several Chinese chestnut trees. The burrs have been dropping, so I've been making soup for the winter. Some plain, some with heavy cream. Made about 5 quarts today.
Peppers have been a bust this year, but I made some paprika. Unfortunately, not enough to last till next year's harvest.
That is all cool stuff. I would like to have energy to put a few pounds herbed butter, with thyme, basil, parsley, chive etc from our herb gardens. We have a lot. I also have a ringed herb drying rack I made years ago. I hope to load it as well. Brad

I have done several meals at Christmas time with chestnuts. All good. Everyone liked the chestnut soup. Brad
We took a day trip on Saturday that included a visit to a long time local meat market and ranch about an hour away. I took a cooler and filled it, including a fresh not frozen or injected 3.3 lb chicken. Got home and roasted chicken on a bed of potatoes and carrots with a lot of out garden rosemary and thyme, onion and a friends homegrown garlic. Roasted at 450F for 20 min or so. Then dialed back to 425F a while. The juices were incredible! Fresh made sourdough bread from another small town on our route.Brad

Brad, that sounds like a good day trip to me, but you had me at “juices”. I love when I get great ingredients and it makes a great meal. Pan juices and gravies done well make the meal IMO . That’s my kind of meal!!!

I forgot about revealing the secret ingredient. I lightly spritzed the finished chicken with a lemon. Brad

If you like potato soup, you would love chestnut soup. They're very similar in the fact that they bothe taste bloody awful if you bite into a raw one, but once cooked, they taste a word of difference. I am pretty sure you'd love them Dale.
More from our day trip. Ribeyes from a smaller town farm/ranch with their own meat market. And, fresh milled and baked sourdough bread from another town a few miles south. I would like to have bought one of meat market's prime tomahawks about 3” thick, but decided 200.00 would be better spent elsewhere. Brad
