It’s that time of year to transition from summer food to fall/winter dishes and I for one am ready.

Not ready for summer food to leave us. Just ate my last good tomato - a brandywine, and will soon miss zucchini. Canned blue lake pole beans are OK but not the same as just off the vine. I have so many winter squash that I'm already tired of them without eating them. And what the heck is Sheet Pan dinner?

Is there a distinction between "casseroles" and "sheet-pan" dinners? Either way, we don't make them often. Marilyn feels compelled to make a tuna casserole every few months. Occasionally, I fish one out of the internet. That said, Marilyn just got nostalgic, and wants to make an old family favorite that her ex sister-in-law brought to the table back in the late 1960s. "creamed tacos" made in a pan. It sounds gross, but the internet still has many versions of it. Marilyn is making contact with that end of her old family for the recipe she used to eat. I am sure I will be eating it within a week or so. (It will be interesting what 5 or so decades will make. I hope she does not "feel it" when she revives it. Brad

I get it, it’s for convenience but I hate it. Pretty much limited to plain meat ………chicken and cut up veggies on a cookie sheet boringly baked.
I think “lazy” when I think of sheet pan dinner. Same goes for quesadillas.
Guess I’m just fussy!!!

Kinda like a Mexican version ..pizza...
(Which Is another form of...sheet dinner.. ;0).. )
Back to the sheet pan matter...
Sometimes we use an oval roasting pan, sometimes a sheet pan to roast/bake a whole chicken or a browned hunk of beef. When using the sheet pan, the meat is elevated on a wire rack in the pan. Then we do place chunks of vegetables in the pan to soak up the drippings, usually the typical potatoes, carrots, and onions (other veggies on occassion). The meats will be seasoned and "herb'd" as desired on that day. Perhaps the pan (maybe very lightly oiled), and/or just enough stock in pan to prevent burning and sticking until meat surrenders some juices.
This simple meal is satisfying in the winter months, makes the house smell good, we reminisce on how our mothers did it, and we love the leftovers. brad

When we have aging flour tortillas in the fridge, I will make a "mock-quesadilla" in a skillet instead of a sandwich. Especially when our bread has blue growth on it. Brad
