Well, the first Chinese chestnut burrs are starting to fall, so I mowed around the trees to make it easier to find them. Feasting should start in a couple of weeks.

Had a huge Ribeye from Aldi that was fantastic. Also , during our Yahtzee tournament, we had a little retro snack. When’s the last time you had

Homegrown chestnuts with homegrown rosemary, butter, and a touch of salt. Undercooked 'em a bit, but I have enough for a few more meals and I didn't even go looking for more today.

When life gives you chestnuts, make whatever you can to take advantage of it while it lasts. I looked at two or three recioes for chestnut soup, combined them, and eventually made my own version. I used a stick blender to try and puree it but wasn't completely successful. I chopped the carrots and chestnuts pretty small, but maybe should have simmered them longer in the broth for a smoother soup.

I also added heavy cream at the end.

I meant to cook a piece of bacon and chop it up in the soup for some extra savoriness, but forgot. Hopefully I'll remember when I have the leftovers.

Chestnuts - rinsed, cut, soaked, grilled as usual
Sauteed onion, carrot, shrooms
Vegetable or chicken broth
Stick blender
Heavy cream (optional)
Definitely needed some salt and pepper

I dont see why you couldnt do this with cashews, peanuts, macadamia nuts, etc. Almonds and pecans would probably be different.

These are the recipes I used for input.

While visiting my son and family in Minnesota this last weekend, we took a trip to the Mercado and piked up some goodies and my son copied and created a Torta that is one of Rick Bayless signature sammiches!!!
It was nothing short of amazing and well worth the work!!!

Starts with a good Telera ( soft fluffy roll with a nice crust) , black beans blended in food processor which is the “mayo” spread on telera. Breaded fried chicken cutlet goes next. Then topped with chopped Napa slaw made with lime juice , Mexican crema , and cilantro. Pickled onions, chopped jalapenos , Cotija cheese , avocado , and drizzled with salsa verde.

Yeah, I know, it’s a lot, but Damnnnnn!!! I’ve eaten a lot of sammiches in my time and the best I ever had was in Rome, but this is THE RUNNER UP!!!
Worth all the effort and the combo of all these ingredients just work.
Rick does a great video of this sammich (torta) . You won’t be disappointed.

I didn't know Bayless was a PBR kinda guy.

Is the corn husk to hold the PBR when it's too cold?

I have enjoyed seeing all the stuff you all have been cooking.

I have made a few things over the years with chestnuts, at Christmas time. including a fresh roasted chestnut soup.

I am still in post-op recovery that prevents me from standing for any length of time, so I have not been cooking. I am heck-bent to make smash burgers in the fall, and a nice Italian dish. *See my "cookbook" topic.

Keep on a cookin' - and I will keep on a lookin'. ;-) Brad
