2 large onions in the cavity...

Note the bung hole top of keg cover..

Add baisting there through the hole...

Turn duck as desired.. :0)

With the leftover shells: Velveeta cream sauce, bacon, onion, garlic, and jalapenos. All topped with panko crumbs and parmesan.

Yes, Cinco de Mayo. Also my Birthday which I’m spending on da Island of Grand Cayman. Found a little hole in da wall local mom and pop restaurant and had Coconut Curry Grouper, rice&beans, tater salad, fried sweet yams (my new “favorite” ) and conch fritters. Great Birthday meal and will be going back there one more time for the grouper. My kind of place!!!

A frozen meatloaf from some weeks ago, mashed potatoes, and green beans with 2 asparagus stalks (this year's harvest.)
Dessert: a chocolate pudding pie augmented with pecan whiskey.

Tonight. I took a 1.5# pork tenderloin, wiped it, then palm rubbed a very thin oil coating. Seasoned all sides and ends only lightly with salt, garlic powder, and fresh minced rosemary. Then, wrapped it with bacon. Placed it on a wire rack above a deep pan filled with fresh baby potatoes and young carrots. In the oven at 425F and a couple of minutes under broiler. Pulled it at internal temp of 140F, tented and rest while heating bread. Plenty leftover. Brad

Because of the veggies below, the underside bacon did not begin to brown.  So, next time I plan to turn the meat over before finishing under the broiler flame.  Pulling the meat at 140*F and tenting a few minutes, left this small pork tenderloin juicy, only a bit of chew, and a very subtle pink hue on it.  Brad

Actually it was the last of the orange ones and all I had left was those little white ones the wife buys at the store LOL.  They were yummy either way though
