Had a nice lunch lady at the hospital for many years (she’s retired now) that made the best damn Hamburger gravy and mashed taters. Always looked forward to seeing it on the menu. That and her Polish Delight, which was cubed pork browned good and slow cooked and mixed with bowtie pasta, sauerkraut, and I’m sure cream of mushroom soup topped with Swiss cheese and baked.

My first attempt at chicken creole.
Olive oil
1 3/4 lb chicken thighs cut into chunks
1 large sweet onion
2 bell peppers
1/2 to 1 cup chopped celery, amount dependent on your philosophy
Required spices:
Garlic
Oregano
Thyme
Bay leaf [not too much]
Crushed red pepper
1 28 oz. can of the best quality diced tomatoes you can afford [Cento or Flora are good and worth the money]
Rice, cooked separately.
Optional spices:
Marjoram
Paprika [not too much]
Better Than Boullion if needed [get the reduced sodium version, it has no msg or the other usual trash]
Some folks add Worcestershire sauce to this and everything else creole or cajun. I don't.
Cover the bottom of a dutch oven with a little olive oil and brown the chicken.
Remove chicken and set aside. Leave the liquid in the pot.
Cook the veggies in the pot until good and soft.
Add the tomatoes and spices. Simmer for 10 or 15 minutes.
Start your rice.
Add the chicken back to the pot. Bring back to a simmer and adjust spices.
When the rice is done [about 20 minutes], the chicken creole will be about done also. If you want it thicker, add a little file powder a couple of minutes before you turn off the heat.
