Haven’t had fried mashed tater cakes in many moons. Used to be a staple growing up, can’t throw anything away ya know!!!

Rotini and meat sauce and a salad. Not a fan of Rotini. I think it should be in a cheesy baked dish or cold salad only. I was cleaning out the closet!!!

Monday I made a huge batch of Spicy Chicken Massaman peanut curry .
It was amazing and I have no pics.

Note to self…………………don’t eat spicy chicken massaman curry 3 days in a row and on the 4th day go ice fishing by yourself 8 miles off shore!!!
Just sayin!!!

Flaky Puff Crust Pizza, with modifications.

I added some smoked and dehydrated (Basque?), and now rehydrated peppers from last year's harvest, local andouille, and some homemade sauce to go with the canned sauce.

It struck me as somewhat bland, even with the andouille and peppers, but the crust is really good! The cold butter is key to the puffiness of the crust, but as soon as you touch it, it wants to melt, so it's kinda tricky.

Will modify next time. I sprinkled some of my spice mix on top to pep it up a bit.

Cannelloni two ways. One with béchamel and one with half a pond of cheese topping - basically one for me and one for my boy both cooked just how we like them.

Looks good.  Hmmm, if you are cutting in pieces butter. Is it a short crust pastry, or a yeast dough?

No pics , but tonight was Chili Cheese Dogs with lots of minced onions. Wow, hit the spot for something simple. Discovered a new old brand of hot dogs and sausages and these all beef wieners were holy cow good!!!
Pretty sure they are only in the surrounding area. Vollwerth & Co. founded in 1915. Damn good snappy dog!!!

Cream cheese blended with sharp cheddar and some freeze dried chives, stuffed into jalapeno halves. Wrapped each one in a slice of bacon and roasted on a cast iron skillet until the bacon was cooked.

Yeast.  I put the link in my post but it didn't seem to work.  I'll try again.

Basically:

Make the dough.
Shred and freeze the butter (at least an hour, preferably unsalted).
Let the dough rise.
Fold the butter into the dough.
Two more short rises.
