Last night was a crockpot full of Chicken Pozole Roja!!! Did NOT disappoint.
Hominy is another ingredient like cabbage that I think we underutilize!!!

That looks good.  We go to NW New Mexico quite a bit and always eat pazole a couple of times at some mom & pop shops.  And, we find bags of dried hominy at the markets, to take home and make our own.  And then enjoy blue corn pancakes in the morning.  We do make our pozole fairly mild to suite us, then add a dash or two of heat as desired.  We also like its "cousin" soup,  pork stew with potatoes, that we eat in New Mexico.   

BTW, we really like hominy. One of my favorite vegetables as a kid was a pile of heated canned hominy soaked with butter.   Brad

Ok, Eggs is the subject. Fried eggs, like em over easy ………low and slow or fast and hot? I can’t decide. How do you cook em? Been eating eggs for breakfast for over 60 years and this last year something happened. One day they taste great and the next I can’t force one down my pie hole. It’s always a crapshoot and never happened before. Luckily it’s not pizza & beer!!!

Phase One. I kept it simple. A 4-bone pork loin oiled and herbed and seasoned. Dripping over carrot and potato chunks and sticks that were oiled and seasoned. Tick, tick, tick. Ready in about an hour. While it rests I will cook a sauce of red wine, Dijon mustard, soy sauce, pan drippings, finally a bit of heavy cream. Wait for it…. Brad

Dinner was great. The pork was tender juicy, 90 min at 375*F. The carrots were a bit crunchy. Served with slices of baguette well buttered with French butter. The sauce was tasty, but in trying to plate it all at the same time, I would have liked to reduce it a bit more. Brad

Thanks. And we still have two chops left with plenty of the vegetables and bread.
The sauce was "surprise" good. Reduce a mix of red wine, soy sauce, Dijon mustard, and pan drippings (unfortunately there was not much pan juice beyond what the veggies drank) then add a bit of heavy cream once cooled a tad. Brad

we had buffalo wings (she made),,, mozzarella sticks,, hashbrown casserole , sausage dip and fritos and walnut cake. pretty good eats.

That walnut cake was great I bet.  I am not sure I ever made one, order it when I see it...which is rare in my parts. Brad

No pics, but in our travels we stop just outside Cleveland on our way to New York and grabbed dinner from an Italian Deli. Had a good panini Italian and split a Lasagna with Mrs. Slammer. Lasagna sauce had no basil or oregano or any other flecks of spice other than onion and very little garlic. I’m assuming they used great tomatoes, because this sauce was so damn good. Wished I had a quart of it to go with some perfectly cooked bucatini!!!

Tonight:
A spatchcocked Cornish hen, roasted with soy sauce and Hot Dirty Bird. Box mac'n' cheese, and steamed peas. Chocolate cheesecake from the local farm store for dessert.

Hmmm. Great idea on the spatchcocked Cornish hens.  While I have SC'd a lot of chickens, I just never thought of doing it to Cornish hen.  Brad

You can take the boy out of the U.P., but you can’t take the U.P. out of the boy!
Visiting my daughter and family in Corning , New York , and I made Finnish pancake ( Pannukaku ) this morning for breakfast. The boys devoured both pans of it, along with 2 lbs of bacon and a pile of eggs!!!
