Visiting my daughter and family in Corning , New York , and I made Finnish pancake ( Pannukaku ) this morning for breakfast. The boys devoured both pans of it, along with 2 lbs of bacon and a pile of eggs!!!

I have not eaten squirrel since my 20's. Tasty it was though. Brad
Valentine’s Day dinner. Bonein ribeye, cooked and basted in CI skillet, green beans boiled then sautéed, salt crusted baked potato, with a batard and a petit Syrah. (I added wine, to the butter rosemary thyme basting juices and reduced it for a sauce) Oh yea, Marilyn baked the frozen but very good cherry pie. Brad

Native British red squirrels, or the invasive grey ones?
Having received my order of British style bangers from the ladies in Colorado. I made toad in the hole this morning. Marilyn made a couple of soft eggs to top off the servings. The recipe I used this time is different than my go to recipe, so the cooking was a bit strange. Next package of bangers I will make bangers and mash with peas and a red onion sauce. Brad
Shepherd's Pie Soup, take 2
Better this time. Changes:
1) Used 2 tbs store bought tomato paste instead of 8oz homemade sauce.
2) Used homemade beef stock (from bones) instead of store bought beef broth (from meat).
3) Gnocchi from the dry pasta aisle instead of frozen. Smaller might be better, but they're easily cut with a spoon.
4) Veggies - 8oz each of canned corn kernels and baby peas, along with some chopped carrots from the produce section. About 20oz total, as per the recipe.
I think that the combination of 1 and 2 made the biggest difference.
I'm gonna call this a winter keeper.

Greys Liz, it would always be greys. I have never seen a red squirrel in the wild in my native England in my 54 years on this planet. I have only ever seen red squirrels in remote areas of Scotland on maybe 4 occasions - and I spend a lot of time in Scotland. The grey squirrels absolutely ruined the resident red population through a combination of predation and a virus the greys carry that is toxic to the reds. The whole reason I had some squirrels to eat is that there have been a couple of sightings of red squirrels locally, so everyone is on a mission to give them the best chance possible by trapping or shooting the greys.

Well, I've never seen toad in the hole served with an egg on top! How was it?
it does also go very well with lashings of that onion gravy you are planning for your bangers and mash. Your pudding looks very good Brad - top marks!

Interesting...we have mostly greys around here, although I've seen a handful of grey/red hybrids. They're smaller and have ear tufts. I visited a town in Canada several years ago that had solid black squirrels, and there is a town in the Midwest USA (I think-- maybe someone can correct me?) that has a population of white ones. They are protected and have the right of way...everyone is expected to stop for them.

Sorry, been busy with the Grandsons!!! Here’s the recipe for Pannkakku or Finnish Pancake .
This recipe is for a 9x13 pan
? 4 large eggs
? ¾ teaspoon salt
? 2 ½ cups whole milk
? 1 cup all-purpose flour
? ¼ cup granulated sugar
? 4 tablespoons unsalted butter
Preheat oven to 400 F. Place butter in 9x13 inch baking dish and put in oven to melt and become slightly bubbly
Using hand mixer or stand mixer whisk together 4 eggs, add flour , milk, salt and sugar. Is everything together until thin batter is smooth. It will be thin.
Pull out pan and pour mixture slowly on top of melted butter.
Put pan back in oven and bake 25-30 minutes or until golden around edges and bubbling up over sides. Don’t be afraid, It gets real big and poofy, but collapses when taken out of oven.
Cut into squares and serve with your choice of fruit sauce:
Finnish style is lingonberry sauce or blueberry sauce or any fruit available that you like. Maple syrup and powdered sugar is also traditional.
We prefer maple syrup and powdered sugar . It’s eggy, custardy and savory.
Slammer!!!
Speaking of squirrels, up in da U.P. in our area at least, we have black, grey, white, albino white, cream and red. Red squirrels are small and a menace and we shoot everyone we see if possible. All the others are grey squirrels, just a different color. The cream colored ones are gorgeous.
Slammer!!!

Yep, slightly cling open a soft egg, to let the yoke run amuck seemed a great breakfast idea when I came across it on a google reach out. If we do a reheat hack, for dinner I may whip up a red onion gravy. Brad

As in chips in a bun with a side of chips?
I presume you're not on a low-carb diet.

Well, fairly low carb - i abstained from the mushy peas. A chip butty is a thing to behold, a heavily buttered breadcake, laden with salt and vinegar (brown malt) and maybe a dollop of sauce of your choice (tomato ketchup for me). You know it's perfect when you pick it up to wat it and the buttery/ketchup juices drip on the floor whilst you eat it.
