Emu is all dark meat, like duck, and at its best it tastes like rancid fat. But if you live in the country, emus WILL keep the rattlesnakes away from your house!

The only thing I have tried other than real chicken is escargot, and I had to close my eyes and tried to swallow but had to spit out. Frog legs, i just covered up and sent to trash. I kept thinking, these things like lobster, turn back raw when they get cold. But i like and do eat lobster dainties, but I don't do much thinking when I do. Micki

One of my favorite appetizers is escargot stuffed mushroom caps. Just take escargot, stuff them into large crimini mushroom caps, place them in a baking dish, pour a mixture off minced garlic, melted butter and white wine over all of them. Top them with freshly grated Parmesana Reggiano and bake at 350 deg for about 15 minutes, or until cheese melts and begins to form a light brown crust. I garnish them with some chopped scallions if I have any handy.
I once served these to a friend and her fiance who came over for dinner. They were well received and our friend proclaimed, "These are the BEST stuffed mushrooms I have ever eaten! What is the delicious stuffing?" I told her that it was escargot. She puked all over the table. So much for dinner. ![]()

I had escargot. Minced up with butter and garlic, it tastes just like garlic minced in butter. Nonetheless, it's made outta snails - not to be consumed by people. I've never understood the mindset; I have to go along with Pete. When they run outta chicken, I'll eat chicken substitutes. Turkey that tastes like bacon? Margarine that tastes like butter? If I want bacon, butter, or chicken, that's what I'll eat.
I like KFC, I like Popeyes, but neither compares to a good prime rib!

And they're tough. Stringy. You know what I mean? Overpriced, posh, trendy, good-for-nothing. Same goes for llama: off-sweet taste.
Now big cats are good. All that nice venison-fed and cow-fed cougar is fit to eat.
Back to "lime-chicken" tonight. Instead of feathered rat, I'm having ruffed grouse.

Serious story time: My wife worked as a civil engineer for a company for 12 years, until last October. A few years ago they were involved in redeveloping an old strip mall in north St. Louis which included a Chinese restaurant. Their head field tech was looking over the property and climbed on top of the building to have a look around. On top of the roof over the restaurant he found a bunch of pigeon traps.
