Brad, we usually wait until the weekend to celebrate if it falls on a week day so I’m sure your wife’s birthday is the perfect timing to celebrate. I was using up leftovers this morning with a bacon, haggis and black pudding sandwich - food fit for a king!!

Then I would have had to add ketchup, and haggis definitely doesn't go with ketchup - tactical eating Dale smiley

Apple turnovers: leftover applesauce, a chopped fresh apple, and purchased puff pastry. Egg wash.

We did breakfast. Frozen waffles, Jimmy Deans “natural” sausage cut to 1/2” slices, orange wedges and Vermont maple syrup. I can’t remember the the last time we had sausage patties at home, maybe 20 years or more. On some Chinese theme China for the Chinese New Year, I suppose. Brad

Well, an extra star or two for that, for sure.  I so wish we had access to fresh picked eating apples, of taste.  Brad

It’s ‘Burns Night’ tonight. The night to celebrate the Scottish poet Rabbie Burns. I don’t have a Scots bone in my body, but we do love haggis, so any excuse to have it doesn’t get missed here. Haggis with ‘neeps and tatties’ (mashed potatoes and mashed swede & carrots). Marvellous food!

My wife insists on knowing what that sauce is and the recipe. Please. Brad

Please do not try this at home…twist lid off of an unsweetened bottle of tea, pour enough into mug to fill, microwave until hot, serve to wife.
Big. Big mistake! Brad

Brad, I'm afraid it's nothing more existing than instant gravy!!  I'm not a spirits drinker so we don't have whisky in the house so no fancy whisky sauce im afraid.

That has to be good.  Marilyn's cousin ran a fishing guide service out of Toledo.  I never went up there to fish.  :-(

Our warm water lakes are stocked with walleye, white bass and stripers, and they are good even considering the water from where they came.   I can't even imagine what wild caught walleye from the cold waters up there would taste like.  Brad

Me too. A McSween's only needs Bisto Best Beef as a lubricant.

Well, half of the beef and most of the barley is finally gone from my last cooking adventure.  I froze half of the beef and half of the sauce, so it will make a comeback when I'm ready for beef again.

Anywho, it was time to cook something else. Chicken with tomato cream sauce sounded good. The sauce is sauteed shallots and minced garlic, tomato paste, and heavy cream. The chicken is... chicken. Served over basmati rice this time.

Brown the chicken, but don't completely cook it.  This will add more flavor to the sauce later.  Browning = caramelization = Maillard reaction.

After simmering the sauce, add the chicken back into finish cooking.  I omitted the white wine, red pepper flakes, salt, pepper, parsley, and other things that were suggested.  I like good food, but I also generally like it to be simple, both in construction and taste.

Serve over whatever you desire, or on its own.  I went for basmati rice this time.

I usually enjoy hacking recipes to my desire. Other times, especially if I respect the source, I will make it "their" way...the first time, anyway. Brad

And complete with poems and more, the Selkirk Grace, and of course the Address to a Haggis . I added a brief explanation of the history and reverence of “The Flowers of the Fallen” while enjoying the Robert Burns cocktails. Brad

We tried gnocchi for the first time tonight with a vodka sauce and Italian sausage. Side of steamed asparagus.
