I won't apologize to the Popsicle people: they should have figured this out years ago.



A day or two before the BIG BBQ, make a sugar syrup



Bring 2lbs sugar and 4C water to a gentle boil.  Reduce heat and simmer 10 minutes.



Remove from heat and cool before using (makes 4+ batches).



 



1C fresh lime juice (6? limes)



1C water



1C sugar syrup



12-16 fresh, big basil leaves, very, very fine chop



Mix lime juice, water, sugar syrup and basil leaf chop.  Pour into 9x9 cake pan, cover with foil and freeze to slush.



Blend to smooth, divide into ice cube trays and freeze hard.



Neither my brother nor I have ever seen anybody eat one of these and remain seated.

Nope, no "life-improving" booze in this one.  Those that imbibe usually have a real snootful by the time dessert comes out.



The non-drinkers get hit just as hard with these.  Quite an entertaining spectacle to watch.

Start with the pint cans that have the instant carbination ball. Turn your fridge down a little lower than usual, and place the cans as close to where the cool air enters the fridge as possible. You want to get it so that the beer is starting to get some slush, but not so frozen that you can't carbonate it. You're gonna want that frothy head in there. Worst case scenario, you can just use a can at normal temprature for the application of head foam. Once it's good and slushy, pour it into a pop mold, or ice cube tray, but leave some room in the top of the mold. Crack your reserve can if needed, and as soon as the ball stops bubbling pour it straight into a glass with some extra room. Stir it around to agitate and spoon some of that delicious froth off the top and top off your pops. Put it right into the coldest freezer you and you got some delicious guinness pops complete with head!!!



Actually, a Guinness float with a little vanilla ice cream is surprisingly refreshing as well!

I was under the impression that one could not freeze alcohol in a standard home freezer, thought it was one or two degrees too warm.



I'm also not understand why/how frozen basil would have any effect on anyone. My sister freezes it all the time, but then she's cooking with it. I bet it's the lime juice. Ever tried it with lime juice and anything else?

ThecGuiness widgets are Nitrogen, not CO2. Also, very
low alcohol compared to other beers, so freezing Guiness
is not that hard.

It's been my observation with the lime-basil treats that anything bigger than an ice cube is a waste.
If it really rattles their cage, let them have seconds.

Make my lime basil adult popsicles like I said in the first place.
Feed them to a whole bunch of people at your next BBQ
Fasten your seatbelt and watch the women-folk react.
