Used to make my own with venison and venison jerky is still my favorite, but I don’t eat it like I used to. Best I ever had was som Asian or Vietnamese jerky which was spicy , sweet, moist and had flavors of lemongrass . A doctor friend gave me a bag and I should have saved the bag to order more. It was AMAZING!!! It almost looked like it was furry, very strange coating, but damn!!!
We make it out at camp with ground venison and spice mix and have about 4 dehydrators with multiple racks going at the same time . The young boys gobble it up as fast as we can make it. The prices on store bought jerky is outrageous. Here in Michigan, we even have Jerky outlet stores with jerky made from every imaginable critter.
Slammer!!!
We'd take fresh roadkill to a locker and they'd make the whole thing into slim-jims. The whole plant would be chewing on slim-jims. It was great!
One of our foreman lived 12 miles away, down the roadkill highway. Along with a dozen more plant workers. You get a green tag for roadkill. Anyway, some @##$% complained one guy was getting all the tags. He didn't know that was supplying an entire plant. So the jer K y went away. Thanks to one jerk.
