I declared a “no cook” weekend. We came close. Last night: boxed spaghetti pasta, our favorite brand of jar of marinara, store bought “Italian style” meatballs, and a boutique brand of par-baked Tuscan loaf. Brad

Asian style beef and vegetables with rice: I cooked the different components separately for a change. Vegges (onion, garlic, peppers, mushrooms, and dried Thai peppers in soy and oyster sauce) beef seasoned and grilled separately on cast iron. Rice cooked in a separate pan.

Tonight Mrs. Slammer made a healthy Big Mac Bowl. High protein , low carb, but tasty!!! Damn thing tasted just like a Big Mac!!! Love me a Big Mac.

Last night: chicken cacciatore pizza with homemade crust, chicken breast, onions, mushrooms, peppers, and cheese.
Tonight: "clean out the fridge pasta" leftover chicken breast, hot Italian sausage, onion, and garlic in a cream sauce with peas over egg noodles.

Souvlakia, aka Greek tacos: grilled pork, onions, tomatoes, and tzatziki sauce (yogurt, cucumber, and garlic) on flatbreads.

Sweet and sour chicken balls with teriyaki noodles. All courtesy of my son. I’m loving teaching him to cook. He boned out chicken thighs and made a batter for the balls, we used shop bought sauce and pre-sliced stir fry veg - just to show you can save time on a school night by using store bought stuff.

Looks great, as usual.  Is he working from cookbooks, or online recipe sources.   I find myself (sadly to say) using more and more online recipes from a few favorite sites.  But I force myself back to the good ol cookbooks as much as possible.  BTW,  I do the same thing anymore-on occasion, by making meals a combination of some quality store bought ingredients with prioritized done-at-home fixins.   One thing for sure, we are getting more and more dissatisfied with meals with get at local restaurants.  Brad

Thanks Brad.  typically we use cook books unless it's something new that we've heard about somewher and want to try (often on here).  He also is keen on learning the recipes or methods that I use from memory, you know, stews/chilli/pasta sauce/etc that i have no set weights or measures for.  Our circumstances have changed here so it's just me and the boy, so we sit down and plan 4-5 meals, go do the shopping and then agree who is cooking what.  I'm really enjoying the time in the kitchen with him.

I likely have had this book for 20 years. It covers the history of English breads, British bread regulations, and of course a gazillion recipes, with no pictures. I have a number of breads from it over the years. Brad

“Land Salmon in a bun”. Sorry, but I’m stealing that one!!! Also, as of late, I’ve been on a chili dog/coney dog kick and lovin these new hot dogs we discovered. Vollwerth’s hot dogs/weiners. Damn good and worth every penny. Fig, if that’s a big glob of ketchup on your beans, there just might be hope for you yet!!!

Homemade cream of mushroom soup: a blend of different "wild" mushrooms, onion, garlic, fresh tarragon, a little white wine, chicken broth, and farm fresh cream. Garlic croutons. Leftover beef club sandwich from lunch. Last night: hotdogs and beans (Al) and a shrimp roll (me.)

Can you expand on the soup ?  We love Portuguese'caldo verde' soup made with cabbage, potatoes and chorizo - what flavours were in yours ?   Also - sounds like a great neighbour to have !

Lasagna with sliced meats. I was at a friends birthday party yesterday and the caterer had produced a mahoosive charcuterie board- so big that I was sent home today with a big bag of meat. I made a lasagna that was similar to one that we made in the restaurant I worked in years ago - it had layers of salami and boiled egg …. I held off on the egg as I think my son would have not liked it, but boy…. The meat layers made for a fantastic dish. Fortunately we’ll be having it for a couple of days yet
