Information on a pre 1900 Kolher & Son 7 string fretless banjo?

Firstly hello and this is my first post; I have recently purchased a pre 1900 Kolher & Son 7 string fretless banjo which I am looking to bring back into working condition, she is currently missing one tuning peg from the headstock and the post from the octave tuner, also it is without tailpiece and bridge/saddle, so any information with regard to restoring her sympathetically would be gratefully recieved, also which strings to be used and how many as I have heard that oftern 5 were used leaving the double course pegs redundant ?
