I've had a couple requests for my chili recipe,so I thought I'd blog it out here.
I start with a 2 1/2 gallon pot,you can cut the recipe in half and make a smaller amount.
2 lbs pork sausage.
1qt. of diced tomatoes.
2 large vidalia onions choopped
1 clove garlic,finely chopped
2 or 3 large green bell peppers chopped
3 cans of beans,I like to put in black beans,chili beans and kidney beans.Just different colors,one of each.
Brown the sausage in a frying pan and add a package of MaCormicks mild chili seasioning and a can of tomato sauce.
I like to drain the beans of liquid before I add it to the pot,the veggies will have plenty of their own liquid when they cook down.
I Salt and pepper to taste,this makes a mild chili,if you like it hot,use Jimmy Deans hot sausage and throw in some jalapenos or haberos if you want fire.
Bring it to a boil for 15 minutes then let it simmer for at least an hr,stirring enough to keep it from sticking to the bottom.
I carefully count out 239 beans............any more'n that is 2 farty. ;-)
