IMO - by far - the most exciting food to cook is pizza Napoletana - especially in a high temp wood or charcoal oven.

You have to hand form your crust, lay it out on a wooden pizza peel dusted with cornmeal or semolina and then top it with just the right amount of tomato puree, fresh mozzarella, fresh basil, sea salt and EVOO as quickly as possible - shaking the peel every few seconds so that the dough doesn't stick.

Then, wearing welding gloves, you have to rush it into the 700° oven (or kamado cooker like I have), do a quick swabbing of the 700° pizza stone with a damp cotton rag, and then slide the pizza off the peel onto the hot stone..which is a trick in itself if your stone, like one of mine, is only 13" around and the pizza itself is 12"...Then, once you've peeled it onto the hot stone, you have to get an aluminum peel under it and rotate it once every 30 seconds or so...This whole thing is made even more exciting by a phenomenon known as backflash which is a peculiarity of kamado style grills in particular though not exclusively. Flashback is what happens when a closed container of very high temperatures and loaded with gaseous volatile organic compounds (VOCs) is suddenly opened and oxygen is introduced into the mix. If you open the lid of the 700° kamado grill to rotate the pizza without venting the cooker first the result can be a spectacular fireball ....which can also be a very effective means of removing all of your arm and facial hair at once.

Then if your oven is hot enough, you did everything correctly and didn't lose too much hair in the process, the pizza is DONE in 3 minutes or less. If you overdid it on the toppings you have a lake of liquid in the center and the crust is soggy. If you didn't turn it quick enough, you have a black crust, and if you didn't work quickly enough and the dough stuck to the wooden peel, you have a mess at worst, or a poorly formed calzone at best.

That's the most exciting thing that I cook.

I once helped build a large solar cooker. It was a project for an environmental bio class. We were talking specifically about environmental stewardship and the preservation of native forests, etc. We built it from mostly salvaged materials. I or my prof, are not above dumpster diving. It ended up being so large and heavy that we put it on some wheels. I had one of those old office chairs from the 50s or 60s, ya know where the rolling base itself was like 50 pounds of solid cast steel! On a sunny summer day, you could cook two whole turkeys at once in less then 3.5 hours. Not too shabby! Although my first attempt at making a solar cooker was designed to cook 6 hotdogs. Ya gotta start somewhere!

In the mid-'80s I did a short stint as a personal chef to a high-ranking government official at the Australian Embassy in Paris. There was to be a diplomatic function later in the week and the Ambassador's wife wanted a shrimp bisque as a first course.

So I went to my favorite fishmonger, told him I needed two kilos of ultra-fresh shrimp in two days. When I arrived to pick them up, he proudly opened the big foam box they were in - and they were all still alive. See why he was my favorite fishmonger?

I don't know what making that soup did to my karma, but it sure was good.
