My Grandmother made these beans for her family during the Great Depression. After that they were served once a week using a silver serving spoon that I have today. I am guessing that pork must have been pretty cheap back then. IF she had really used a different cut of meat, I suspect she kept that fact to herself in the better years thereafter.
1 lb. (bag) of Great Northern White Beans
½ c. sugar
1 ½ lb. Center cut pork loin (boneless)
Salt & pepper to taste
Wash beans.
Cover beans in cold water and bring to a boil, then drain.
Cover beans with cold water, about 4 inches above beans, add sugar, simmer, then to a boil, add salt and pepper.
Dump beans into roasting pan.
Put loin in center after lightly salted and pepper.
Bake at 275 degrees for 4 to 6 hours, check and adjust time after 4 hours.

Someone from Texas told me that the local response to unexpected visitors is "Mas agua en los frijoles" (More water in the beans). Well, we're having a depression right now, and I'm fighting it with what I call Cap'n Jinks. (I'm Cap'n Jinks of the Horse Marines, / I feed my horse on corn and beans...) Cap'n Jinks is corn and beans in some way, shape or form: dried beans, canned beans, dried corn, canned corn, fresh or frozen corn &c.

Ooh I'm getting confused .... question time!
(1) Can I use "So-So" Northern White Beans?
(2) If the recipe's so simple, how come I can't just pop 'em in the oven and bake 'em?
(3) On the washing bit, can I just take 'em in the shower with me? (OK this is now you know I'm being silly, everyone knows I bathe using a pot and a vienna sausage can for a water scoop).
BrokenStrings - I hear ya on the Depression. Remember rolled oats, rice, masa, etc are all your friends. You can also get "slightly insulted" veggies from the market just for asking, "for your rabbits" don't ever say they're going to be used to feed a hungry human. You can also dumpster dive, ask for stuff "for your animals" from cats to sheep, maybe do some foraging etc., we're all in these hard times and more of us are feeling it.
