Safeway now features.... fish heads!
Back when I was "poor" (I now get by on far less) in the early 80s the local markets had fish heads, very cheap too. They were aku (tuna).
It took me forever to learn, there's good and tasty meat on a fish head! I actually thought they were sold for bait, but in reality there's good meat under the jaw, all over the place on a fish head and fair amount of fat which is what makes the flavor.
When I was going through the travesty that was college, I could have eaten pretty well on fish heads.
So: Any fish head eaters here?

I've used them for stock. Now, halibut cheeks are a whole nuther story! Yum!

A friend of mine was a salmon fillet-er on the west coast. She would boil the heads and scoop out the cheek meat. What a great soup!

Fish heads are a major ingredient in the stock for any decent fish chowder, and the cheeks are good , too, (if you like fish).

Cheek Meat Rules! I had some jobs working for various fisheries research agencies in northern Canada.
We did our fair share of "sample netting." While we gave the catch away to the locals,
we cut and stashed the cheek meat for feeds. The timing depended on equal weights of cheeks and french fries.
